Katie's Beef Jerky - Carolina Reaper

Katie's Premium Jerky & Snacks is a brand owned by Katie's Snack Foods, LLC based out of Hilliard, OH. It was started in 2014 by Katie Levesque, a graduate of The Ohio State University.

Katie loves jerky so much, that she actually sleeps with it under her pillow (in a plastic bag), and prefers spicy jerky (so that other people won't ask for some). She loves it so much, she left her career as an engineer to launch her own jerky company. Katie's Premium Jerky & Snacks is made in its own USDA inspected facility.

This "Carolina Reaper" variety won an award at the 2017 ZestFest Fiery Food Challenge. It's described as "gluten free", and comes with the warning, "dangerously hot!".

Review

The first flavors that hit the tongue is the Carolina Reaper flavor, followed quickly by a high degree of burn. There's a light sweet and light touches of salt. The chewing brings on the soy sauce, and some noticeable garlic and onion. The burn get more intense.

For being advertised as "Carolina Reaper" it holds up really well. I get a lot of the Carolina Reaper flavor and a ton of heat. This rates as "hot" on our heat scale (level 5 out of 5). It's so hot, it makes me cough. My eyes water, my scalp sweats, my nose runs. This is whole muscle masochism at its finest.

Otherwise, the primary tastes profile is a lightly sweetened soy sauce heavily laden with the flavor of Carolina Reaper chile peppers and dashes of garlic and onion.

The meat consistency looks great with its light marbleized streaks of fat. It's a mixture of slices, some thicker and softer, others thinner and chewier. On average, it's easy to chew through. The chewing texture is good. It starts out a little gummy, and a little like soft plastic. But once chewed down soft, they take on a steak-like feel. I found light amount of stringiness.

Verdict

This Carolina Reaper variety from Katie's Beef Jerky will collect your soul and annihilate your body in a burning heap of ash with a heaping dose of the world's hottest chile pepper. It only took one healthy bite of this beef jerky to feel my blood rise in temperature and my tongue light up on fire. Katie's keeps the rest of the jerky toned down, yet still savory, to let the Carolina Reaper flavor show through. The meat consistency is easy to chew, allowing you to get this into your belly as fast as you'd prefer. We love a jerky that really belts out its advertised flavor, and can't help awarding this our highest honor.

Tibbs Beef Jerky - Garlic Sriracha

Tibbs Beef Jerky is the creation of Steve Tibbs, who launched the business in 2016, based out of Bakersfield, CA. Tibbs descends from a line of barbecue grill masters and even dabbles in charcuterie.

But, the story behind Tibbs' entry into the jerky business was weight loss. Reaching 260 pounds at one point, he decided to forge together his love for meat snacks with hitting the gym. He started making his own jerky using whole foods, fresh beef, and healthful ingredients. When his friends tried his jerky, Tibbs realized he had a gold mine on his hands. Today, Tibbs jerky is sold in stores throughout the greater Bakersfield area, as well as online from its website, and now through a monthly subscription service.

This "Garlic Sriracha" is described by the company simply as, "...will have you coming back for more".

Review

The first flavors to hit my tongue is chile pepper flavor, along with light sweet, yet noticeable garlic. The chewing brings on a more defined sriracha sauce flavor, while the garlic gains some strength. There's a light natural meat flavor at the end.

For being marketed as, "Garlic Sriracha", it delivers well. I get a very defined sriracha sauce flavor, but I also get quite a bit of garlic. While sriracha sauce already contains a lot of garlic, there's clearly more garlic flavor in this jerky. The sriracha sauce tastes like it was just squeezed from the bottle, to the point where I can taste its individual components: jalapeno, garlic, sugar and salt. The level of heat is moderate, ranking as "medium" (level 3 out of 5) on our heat scale.

Otherwise, the primary taste profile is a strong garlic over a sriracha sauce marinade. There's touches of sweet back in there, along with a savory base to keep you snacking. The natural meat flavors linger at the end.

The meat consistency is largely dry, and a little extra chewy. It can take a bit of effort to get through, but not too bad. Overall, it has a meaty, steak-like chewing texture, with a light amount of stringiness.'ll

This Garlic Sriracha variety from Tibbs Beef Jerky goes extra garlic over an already garlic-forward sriracha sauce, to create a spicy, pungent chewing that'll turn an Italian mafioso into a Thai Food fanatic. Think of this as a garlic lovers beef jerky, but with a strong sriracha sauce profile. It has a similar level of heat as sriracha, just enough to feel it, but not too much to hinder the snacking frenzy. It's chewy, yet still easy enough to chew down without tiring the jaws. You get a nice natural meat flavor finish, and a strong garlic breath to keep vampires at a distance.

C-Star Provisions - American Wagyu Beef Jerky

C-Star Provisions is a new beef jerky brand that launched with a Kickstarter campaign back in August of 2018. They've since started selling online through their website.

The name, "C-Star" stems from Cowboy Star, the famous steakhouse in San Diego's East Village. It's actually a collaboration between the restaurant and an investment group. Cowboy Star had been offering this jerky to diners for the past year. When a group of investors had dropped by for dinner, they sampled the jerky and knew there was potential for a business deal.

This American Wagyu Beef Jerky is made using the same Wagyu beef that Cowboy Star uses at its restaurant. According to C-Star Provisions, this jerky has a, "rich, complex flavor and melt-in-your-mouth texture that you can only find in a true steakhouse".

Review

The first flavors that hit my palate is a beefy, natural meat flavor, along with chili powder, and a touch of vinegar. The chewing goes on to bring out a bit of sweet with a noticeable garlic and a light smoky paprika. The natural meat flavors develop further through the chewing and introduce a light marbleized character.

For being marketed as an American Wagyu beef jerky with a "rich, complex flavor" and a "melt-in-your-mouth texture", it definitely has that marbleized flavor that you expect from American Wagyu beef along with a rich, natural meat taste. The seasonings and marinade do in fact taste "complex", due to the way each ingredients remains identifiable. The honey (not just the sweet) delivers its unique flavor, along with the Ancho chili powder, smoked paprika, particularly the garlic, and even a bit of the red wine vinegar. However, the "melt-in-your-mouth" texture is not really there. These slices of round tend retain their expected chewy nature of jerky, and don't quite deliver anything tender, moist, or soft.

Otherwise, the primary taste profile is a blend of Ancho chili powder and smoked paprika, with a light sweet and noticeable garlic, over a rich, marbleized natural meat flavor and a fair amount of fatty, oily flavor.

The meat consistency is excellent for slices of round cut against the grain, depicting its streaks of fat. I found nothing stringy and no unchewable tissues. It's all meat! The chewing texture starts out chewy, yet feels meaty right away, not rubbery or gummy. Even though there's a fair amount of oily residue on the fingers, the meat feels dry... maybe a little bit too dry for American Wagyu. But once chewed down soft, it takes on a more steak-like texture, just one that seems more well-cooked.

Verdict

This American Wagyu Beef Jerky from C-Star Provisions delivers a rich, marbleized natural meat flavor, just as you'd expect from American Wagyu cattle, and it delivers a natural, fresh taste considering the company uses grass-fed, Eastern Idaho-raised beef. That flavor is met with a very unique blend of seasonings and marinade, one that foregoes the expected savory taste profile and introduces something less salty yet more flavorful through combinations of smoked chilies, garlic, and a light swash of red wine vinegar. However, it seems a bit too dry, almost like a ribeye that got cooked too long. The oily residue will help make this jerky seem more moist than it really is, however. Moreover, this jerky is sliced thin, and I kept wanting thicker and meatier pieces for something intended to be a meat snacker's paradise. Overall, it's a great flavor, one that definitely takes a creative new direction from the typical soy sauce/worcestershire combos out there.

People's Choice Beef Jerky - Garlic Ginger

People's Choice Beef Jerky launched a new flavor recently, "Garlic Ginger".

People's Choice Beef Jerky is a brand of Peoples Sausage Company, Inc. based out of Los Angeles, CA. It's a family-run business that's been around since 1929. See our previous reviews of their jerky.

This Garlic Ginger jerky is part of the company's "Tasting Kitchen" series, which is a line of jerky that mixes bold, eclectic ingredients, with the old fashioned style of making jerky. People's Choice says that this Garlic Ginger variety gives a healthy dose of garlic with the bright, counterbalance of ginger. They infused sesame seeds and sesame oil to create an Asian profile.

Ingredients

Beef, cane sugar, garlic, sesame seeds, sea salt, dehydrated bell pepper, spices, sesame seed oil, soy sauce, water.

Review

The first flavor I taste on the palate is a noticeable garlic flavor, which gradually becomes more defined. There's a light oily feel, along with a light saltiness. The chewing brings on a touch of sweet and hints of sesame. I can also pick up a light natural meat flavor, and then a subtle bell pepper.

For being labeled, "Garlic Ginger", it holds up somewhat. I do get a lot of garlic flavor, and in fact, the flavor is a lot like eating roasted garlic with some olive oil dabbled on. The ginger, however, is hard to identify. I assume it's sitting somewhere in the "spices" mentioned in the ingredients. If it's there, it's masked by the stronger garlic, and doesn't really offer any counterbalance.

Otherwise, the primary flavor profile of this jerky is the garlic. It's strong enough to overshadow the other ingredients, but doesn't burn the palate the way intense garlic can do. There's the light sweet in the chewing, touches of sesame, and a light natural meat flavor to round out the other flavors.

The meat consistency is excellent. There's some light spots and streaks of fat, but otherwise, very meaty. The chewing is tender, yet still offers some chewiness the way jerky should. The feel starts out meaty, and eventually softens up to resemble real chunks of steak. The light bits of fat add touches of flavor, and the oiliness leaves a light film on the roof of my mouth.

Verdict: This new Garlic Ginger beef jerky from People's Choice delivers a strong garlic flavor that garlic lovers will rejoice. The addition of sesame seed and sesame oil is an excellent choice that adds a touch of nutty flavor and helps create an Asian stir-fry profile. The chunks of dried bell pepper makes for great visual, while the oily texture seems to heighten the garlic intensity. I didn't really pick up any ginger flavor, however. Perhaps it's still too light to notice against the much stronger garlic. Overall, People's Choice hit a home run with the marriage between beef and garlic.

Whiskey Hill Smokehouse is a brand owned and operated by Whiskey Hill Smokehouse, LLC, based out of Hubbard, OR. The company also owns The Jerky Hut brand of jerky, along with Bakke Brothers Brand.

According to the company, the Whiskey Hill Smokehouse brand focuses on exotic meats and more exotic recipes than The Jerky Hut and the Bakke Brothers lines. It also focuses on all natural ingredients and its jerky varieties are all marked as "Gluten Free".

This "Saki Teri-Yaki" is said to be a throwback to the days when teriyaki was made with real sake. These days, most other companies make teriyaki with mirin wine, or rice wine vinegar.

The first flavor I pick is the teriyaki sauce, with a fair amount of sweet and light salt. The chewing brings on a more defined teriyaki, with a clearly fermented flavor, while the natural meat flavors come in. There's a touch of garlic and onion noticeable.

For being marketed as a sake-infused teriyaki, there's clearly a more fermented flavor in this, just like what true, Japanese-style teriyaki is traditionally known for. The sake is lightly noticeable on its own, with touches of that rice-wine fermented profile. It mixes together well with the sweet and soy sauce to create a more Japanese steakhouse flavor. This teriyaki, however, doesn't have the ginger contrast that traditional teriyaki has.

Otherwise, the primary taste profile is a well-sweetened teriyaki sauce, with a strong ferment character, and touches of garlic and onion seasoning. The natural meat flavors come on towards the end.

The meat consistency is excellent. These are thick strips of pure meat with no signs of fat and no stringiness detected. The initial bites are chewy, yet are still easy enough to get through, but chew down to a steak-like, meaty texture. There's a faint bit of stickiness that remains on the fingers.

Verdict

This Saki-Teri-Yaki beef jerky from Whiskey Hill Smokehouse is a true throwback to the old days of Japanese-style steakhouses when teriyaki was made with real sake. This has that rich fermented flavor, with shades of that famous rice wine profile. It mixes in with the strong sweet and soy sauce ingredients to create that popular Japanese steak sauce that teriyaki fans today are longing to find. However, the thick slices of beef in this jerky adds to the experience by giving you a more meaty chew and steak-like feel. You get true, Japanese-style flavor, with thick manly cuts of meat, for a treat you'll rarely find elsewhere.

The chewing brings on more garlic and more of the red pepper. There is a fair amount of heat building. The natural meat flavors are more defined in the latter part of chewing.

For being being marketed as, "Spicy Garlic", it definitely holds up well. It's certainly spicy, rating as a "medium hot" on our heat scale (level 4 out of 5). It also offers a nice red chile pepper flavor and maybe shades of black pepper. The garlic is also spot on. That pungent, rhizome spice takes the stage early on stays on board throughout the chewing. Both the red chile pepper and garlic seem to contribute a one-two knock out punch of flavor.

Otherwise, the primary taste profile is all garlic and red chile pepper, with touches of salt, and the natural meat flavors. There's no sweetness to this at all, making it perfect for low carb and Keto diets.

The meat consistency is largely dry, and a little extra chewy. It can take a bit of effort to get through, but not too bad. Overall, it has a meaty, steak-like chewing texture, with a light amount of stringiness.

Verdict

This sugar-free, Spicy Garlic style from Tibbs Beef Jerky give you your money's worth in both spice and garlic, placing the two tongue provoking headliners front and center on the palate. The level of heat is significant enough for burn addicts without forcing a hesitation in snacking. But it's not just all heat; the red chile flavor has an equal role in this too. Meanwhile, the garlic is strong enough that it takes the spotlight as well, adding an entirely different layer of spice. But ultimately, it's the natural meat flavors that really bind all this together. It's like a fried-steak flavor seasoned liberally with red pepper, black pepper, and garlic, with just minimal amounts of salt, and no sweeteners to speak of.

Chef Craig's Beef Jerky - Black Thai

The newest flavor to come out of Chef Craig's Beef Jerky is this Black Thai. Read our review of their Original Beef Jerky.

Based out of West Kingston, RI, Chef Craig's Beef Jerky was originally started by Craig Mitchell, who holds a Culinary Arts degree from Johnson & Wales University. He's been cooking professionally since 1978. Chef Craig's Beef Jerky was a way to extend his career in cooking and cuisine.

This Black Thai variety is described by the company as "The same chewy beef jerky with a taste of Asian spiciness; it leaves a lingering warm sensation in your mouth."

Ingredients

Beef, soy sauce, garlic chili pepper sauce, brown sugar, green curry paste (green chili, garlic, lemongrass, thai ginger, salt, shallot, spices, kaffir lime), sesame oil

Taste

The first thing I taste from the surface of these pieces is a sesame oil flavor, followed by a light soy sauce and a light, tangy chili pepper sauce. The sweetness is noticeable also, and there's a noticeable garlic to this as well.

The chewing brings in a bit more of the soy sauce, but also a flavor much like stir fry and touches of hoisin sauce. It has a tanginess, perhaps coming from the lemongrass, but a pungent character perhaps supported by the green curry. It has a very unmistakable Asian-like flavor that reminds me of Thai-style stir-fry.

For being marketed as "Black Thai", it holds up very well. From that very first sesame oil flavor, to the soy sauce, the chili pepper sauce, and the tangy/pungent green curry, this jerky oozes the words "Asian" and "Thai". It has a flavor that paints a picture of an Asian lunch cafe where chop sticks pick up noodles, slices of beef and vegetables, and bottles of fish sauce and Sriracha are squeezed. Imagine the smell of a large wok sizzling and smoking, locking in the flavors of spices, chiles, and sauces.

Otherwise, the flavors that seem to define this jerky is a tangy, savory, blend of soy sauce, chili sauce, and green curry, but laden with a noticeable sesame oil. There's also a noticeable sweetness to balance it out. Overall, it's hard to not identify this jerky as having an Asian flavor.

There's a moderate amount of heat to this as well. I'd rank it as Medium on my personal heat scale (level 3 out of 5).

I don't pick up any natural meat flavors. The marinades and seasonings seem to overpower.

Meat Consistency

These are slices of whole meat, sliced into bite-sized pieces of medium thickness. There's a fair amount of smaller sized bits too.

This is a dry jerky with a sticky, oily surface feel. These pieces have a good deal of flexibility, and seem slightly rubbery.

The chewing texture starts out with that slight rubbery feel, and offers a fair amount of chewing resistance. A few chews into it and it starts to soften, taking on a very meaty resemblance, and by the time its chewed down to a soft mass, it has a steak-like feel, though a touch rubbery.

I don't see much fat on these pieces and found no gristle or tendon. I don't encounter any stringiness, but felt a few pieces of unchewable tissues. It's mostly all meaty.

In terms of clean eating, my fingertips pick up a fair amount of oil requiring a licking and wiping before I touch the keyboard.

I'm giving this a best rating.

This Black Thai jerky from Chef Craig's Beef Jerky woke up my senses and rang in the "wow factor" with flavors that touched all sensory zones on my tongue. The sweet, the salty, the pungent, the savory, the spicy, the tangy, it's all in these bite-sized chunks of meat.

First, I really love the sesame oil flavor on this because it works so well in giving the garlic chili sauce and green curry that extra bit of Asian-flavor. The pungent garlic and curry create a lot of contrasting flavors against the sesame oil and brown sugar, while the soy sauce adds the savory component that makes it satisfying to chew.

The meat consistency and chewing, overall, seem good. The oiliness on the fingertips can be nuisance if you're trying to snack while typing, driving, or channel surfing. And the chewing texture maintained a light rubbery character once chewed down. But overall, the chewing is still good and the flavor is so awesome you won't even notice it.

Legacy Meats is a family-run meat-distribution business located in Kersey, Colorado. Ben Elliott, who built a career raising cattle, launched this business in 2012 when the trend for buying locally-sourced foods gained traction. Last year, Ben and wife opened up a store in Kersey.

Legacy Meats supplies grass-fed steaks and chops to local customers, but has built a following across the world. Recently, they added beef jerky to their product line up. You can purchase jerky packages individually, or through their own Jerky subscription program.

This Mild Hickory Beef Jerky is described by them as simply, "a classic flavor; right out of your favorite spaghetti western film".

The first flavor that hits my palate is a saltiness, followed by a soy sauce. The smoke flavor slowly comes in. The chewing brings on more of the soy sauce, with touches of sweet and hints of black pepper. There are faint shades of cayenne.

For being labeled "Mild Hickory", it holds up quite well. It definitely is a mild jerky in terms of spice. There's nothing hot nor spicy about this. And yes, I do pick up a hickory smoke flavor too. The hickory is not necessarily the dominant flavor in this, but it certainly is there.

Otherwise, the primary taste profile starts with the soy sauce, but adds that hickory shade over it, with faint bits of other seasonings, namely sweet, black pepper and cayenne. The natural meat flavors come through lightly towards the end. It's also salty due to the dominant soy sauce.

The meat consistency looks good. I do see several pieces with significant fat, but they don't seem to get in the way of chewing, though don't add anything to the flavor either. These pieces are dry, yet not tough. They remain chewy, yet still easy enough to get through. They do, however, chew and feel like real pieces of steak, closer to something cooked well-done.

Verdict

This Mild Hickory beef jerky from Legacy Meats has that classic, salty, soy sauce-forward profile colored with hickory smoke flavor to create a pretty savory, classic Western-style chew. It's not spicy at all, yet still brimming with flavor mostly from those two ingredients, though the more-discriminating palate can pick up hints of black pepper, cayenne, and sugar. Perhaps it's best character is its meaty, steak-like chewing texture, creating a sense of chewing something fresh and straight off the pasture. Overall, it's a simple jerky in terms of flavor complexity, but delivers that classic smokey-soy sauce tandem pretty well.

The first flavor that hits the tongue is sweet, followed by a faint salt. The chewing brings on a touch of black pepper, and eventually introduces the natural flavor of venison. A light smokiness finally finishes off the flavor.

For being a venison jerky, this does give off a noticeable venison flavor. It has that more rich, red meat character that venison is known for, and just like what Whiskey Hill Smokehouse says, it doesn't have the "wild taste". It's a milder venison flavor overall, not really the sharp, darker red meat flavor.

Otherwise, the primary taste profile is a dominant sweet, along with a noticeable black pepper, against the natural venison meat flavor. The garlic and smoke flavoring remains light in the background.

The meat consistency is excellent. It's a bit tough initially, and will take some chewing effort to get through, but yet doesn't wear down the jaws that much. It's actually a dry jerky, though quite moist and sticky on the surface. Yet, these appear to be thick slices of pure venison meat, with no stringiness and nary any fat.

Verdict

This Venison Jerky from Whiskey Hill Smokehouse serves up the unmistakable flavor of venison, with a clearly defined rich, red meat character that deer is known for. It's not gamey at all, yet offers a natural meat flavor distinguished from beef and other red meat animals. The company does a great job of minimizing the seasonings to help the venison meat flavors rise to the top, yet still offers just enough sweet, garlic, and black pepper to keep this savory and snackable. Otherwise, this jerky tends to be tough, requiring you to get good grasp just to pull apart. And because the surface of these pieces are moist and sticky, that good grasp results in some messy fingers. For that matter, this jerky is better suited pre-sliced into bite sized pieces. On top of that, despite the brand having the word, "Smokehouse" in the name, the smoke flavor doesn't taste real wood smoked. Regardless, the flavor of venison is well represented here, and will certainly convert many deer meat newbies into repeat snackers.

Jeff's Famous Jerky recently released this new flavor, Carolina Reaper. Based out of Mission Viejo, CA, Jeff's Famous Jerky is a brand owned by Jeff's Famous Foods, Inc.

The company started up in 2010 when Jeff Richards decided to make a business from his favorite snack food, jerky. Since the 1970s, Richards has been making his own jerky, getting better year after year, similar to like a 40-year old bourbon. Professionally, Richards has spent his career in the restaurant business and also coaches entrepreneurs through a consulting business.

This Carolina Reaper variety is of course based on the currently-world's-most-hottest chile pepper, the Carolina Reaper. According to Jeff himself, he launched this jerky variety after friends kept asking for something "over-the-top fiery".

The first flavor that hits right away is the Carolina Reaper itself and it's pungent, floral flavor. The burn starts up right away. The chewing brings on the teriyaki along with a fair amount of sweet and bits of garlic. I can also pick up a tangy, fruity character, and light amounts of natural meat flavor.

For being marketed as a Carolina Reaper jerky, this is definitely over-the-top fiery! One small piece sets about a chain reaction of burn, sweat, heavy breathing, and hands reaching for cold drinks. The peppery aroma coming off of this jerky creates the same kind of anticipation and trepidation as a cherry-hot branding iron. Yet, the flavor of chiles is right there. This jerky has full Reaper flavor, not just heat. On our heat scale, this rates as "hot" (level 5 out of 5).

Otherwise, the primary taste profile is a rich, pungent, Carolina Reaper chile but laden over a sweet, tangy teriyaki, with a lightly fruity character and notes of garlic.

The meat consistency is excellent. This is a semi-moist, and tender jerky cut from what appears to be beef brisket. The initial bite is soft yet meaty, and once chewed down it feels almost like filet-mignon cooked medium rare. I didn't find any stringiness or unchewable tissues.

Verdict

This Carolina Reaper beef jerky from Jeff's Famous Jerky delivers a ton of heat and doesn't waste time getting there. In fact, if you plan to share this jerky with friends, you might to have them sign a release of liability first. This jerky also delivers the full, rich flavor of Carolina Reaper chiles, with its pungent, earthy, yet floral signature. Fans of chile peppers will also get that endorphin rush that comes with the Reaper's capsaicin surge. But this jerky is more than just a fiery-hot chile pepper, it's actually based on a great teriyaki marinade and meat consistency that Jeff's Famous Jerky is known for. I love the tangy chewing, fruity character, and the soft, steak-like chewing texture. You can't go wrong with any of Jeff's Famous Jerky varieties, but if seething hot meat snacks is your game, you can't go wrong with this Carolina Reaper choice.

Dahlonega Jerky Co. is a new brand launched in 2018 by Steve and Laurie Hallock out of Dahlonega, GA. The couple owns Outlaw Jerky & Trail Grub, a jerky and snack store based in the same town.

Their "Taste Local" jerky line was inspired by the farm-to-table culinary experience using locally sourced ingredients. The Dahlonega Jerky label pays tribute to the town's gold rush history. It is the location of the first U.S. Gold Rush in 1828. The label is based on an 1800's Gold Mining Stock certificate.

This Cracked Pepper Beef Brisket jerky variety is described as having a "savory hickory flavored beef, followed by salt and cracked black pepper...", along with "...a medium chew that chews down to a steak chew texture."

The first flavors to hit my palate are a light, savory, smokiness that gradually magnifies as my mouth began to water. Beefy flavors show up even before chewing commences. This is a good thing! Chewing brings out more savory notes with spikes of cracked pepper zing and slight hints of sweetness.

As for the maker's claims for a "savory hickory flavored beef, followed by salt and cracked black pepper...", the pepper pungency closely follows the beefy dimensions and saltiness as described. The smoke maintains a more subtle, background role with the cracked pepper and salt pushing this robust brisket jerky munching experience.

Otherwise, the primary taste profile is true to claims with plenty of beefy-- even "steaky" tastin' goodness that's not overly salty but sufficiently peppery. Balance & proportion are well executed.

Texture-wise, this is a whole muscle jerky that chews well without stringiness, overly dry crunch or unchewable tissues. Good beef cut selection allows for snackin' without overly gnawsome jaw muscle strain.

Verdict

This Cracked Pepper Beef Brisket variety from Dahlonega Jerky Co. was a welcome, craft jerky delight; wholeheartedly recommended for those looking to upgrade their jerky game from the grocery checkout varietals. Particularly welcoming was the absence of off flavors plaguing the glut of mainstream overly industrialized meat snacks. Meat consistency with a clean, natural chewing texture helps to bring out the pure beef flavors and basic seasonings with Southern style Georgia country charm. Getcha some!

Grill Your Ass Off is a line of jerky and seasonings that launched in 2016 by Army Veterans, Jason Murff, based out of Hutto, TX. Murff had actually started with a line of seasonings and just now expanded into jerky.

The idea for his brand stems back into his Army days when he developed seasonings for his brothers in arms. After the service, he went into college to sharpen his business skills and went on to launch his new brand. Murff donates a portion of his proceeds to charities that benefit military and first responders.

This Cowboy Style jerky is described by Murff as, "Rugged Trail Delight with just a hint of smoke".

The first flavor that hits my tongue is a light salt and light smoke. The chewing brings on a bit more salt through a light soy sauce. But, there's a garlic starting to come in along with a touch of sweet. The natural meat flavors bring up the rear in a light showing.

For being marketed as, "Cowboy Style", with "just a hint of smoke", it does have a resemblance of that bold, manly flavor, but toned down somewhat. When I think of Cowboy style jerky, I think of bold seasonings, more garlic, more black pepper, more smoke... This has those elements, doesn't have enough to seem "rugged". It's more of a gentle cowboy, or maybe a city slicker, who's still trying to get used to black coffee and chewing tobacco.

Otherwise, the primary taste profile is a moderately salted, but watered down soy sauce, helped by a light boost of garlic, and a trace of smoke.

These are very thin sliced slabs that feel dry, yet are chewy. There's touches of crunch to these in the initial chews. The take on a crumbly chewing texture, with a meaty feel, but never becoming steak-like. I see some light fat streaks, but overall these are lean slices.

Verdict

This Cowboy Style beef jerky from Grill Your Ass Off offers that Old West flavor and feel without going overboard on the seasonings. It's more of a lightly seasoned Cowboy Style, one that lets the natural meat flavors show up better, and doesn't scorch the tongue with the heavy salt and black pepper that other brands tend to do. While old veteran cow pokes might prefer a bolder, stronger flavor that will help their weathered and worn taste buds register a stimulus, this interpretation from Grill Your Ass Off seems to be targeted to meat snackers looking for something more snackable. I really love the semi-crisp texture of these slices that deliver a light crunch. While it doesn't really deliver a steak-like chewing texture, it's still meaty good snack that keeps it simple.

Bakke Brothers Brand is owned by Whiskey Hill Smokehouse, LLC based out of Hubbard, OR. Whiskey Hill also owns The Jerky Hut, as well as its own house brand, Whiskey Hill Smokehouse.

Bakke Brothers was started by Phil Bakke, one of Whiskey Hill's founders. The brand differs from The Jerky Hut in that it's free of preservatives such as sodium nitrite, sodium erythorbate, et al, and it's also gluten-free.

This Teriyaki Beef Jerky is marketed as, "Gluten Free", "No MSG", and "No Nitrates", and other than that, is simple marked, "Teriyaki".

The first flavors I pick up is a lightly smoked, teriyaki flavor, with a shade of onion. The chewing brings on a moderate sweet, with a bit more onion, and traces of garlic. The teriyaki picks up a bit.

For being labeled as, "Teriyaki", it does offer a teriyaki flavor, though not fully in the classic, Japanese style. It has a sweetness, but not the thick sweet one might envision when they think of a teriyaki steak. It doesn't quite have the pronounced ferment flavor, but it does have shades of that character. I don't pick up any of spicy, pungent, contrasting seasoning.

Otherwise, the primary taste profile is a teriyaki sauce comparable to a Kikkoman's or Yoshida, but one where the sweet and fermant qualities are toned down, and seasoned most notably with onion.

These are thick sliced strips of beef that appear to be quite lean. They bite off easily enough, with maybe a touch of chewiness and a little bit of gummy texture. They don't quite chew down to a steak-like feel, they tend to remain gummy and a little crumbly. There's a light oily film that remains on the fingers.

Verdict

This Teriyaki beef jerky from Bakke Brothers Brand delivers a simple teriyaki-style taste that seems perfectly suited for meat snackers that want that expected flavor without anything over-the-top, fruity, peppery, or unusual. What makes it different is that it's delivered on thick slices of pure beef that pack on proteins and gives you a substantial meaty, beefy feel in your hands. While my expectations for teriyaki tends to wander into the more Japanese traditional, this interpretation is clearly marked for the American palate, keeping it simple, but giving you a lot of meat to chew on.

Jerky's Gourmet is a new brand of jerky, founded by Tim Gerstman and Andria Taylor, based out of San Diego, CA. Gerstman, who transplated to San Diego from the East Coast 8 years ago, met Andria who also happened to love beef jerky. The two joined forces and launched Jerky's Gourmet.

Their jerky is sold at various shops, bars, and venues across the San Diego area. However the two can be found at the Little Italy Farmers Market on Saturdays, doling out samples of their jerky.

This Ghost Pepper jerky is described as being "soy free" and "gluten free", and is balanced "with subtle hints of honey and pineapple".

The first thing I taste on the tongue is a strong sweetness. The ghost pepper heat builds up quickly. I can taste some of its flavor as well. The chewing brings on more of the ghost pepper flavor, along with some worcestershire, and seasonings. I can also taste hints of the pineapple.

For being marketed as a Ghost Pepper beef jerky, it certainly holds up well. I do get quite a bit of its sharp, seething heat, but also a lot of its fruity, flavor. The heat is quite hot, rating as "hot" on my personal heat scale (level 5 out of 5). It brings on a runny nose and sweaty forehead.

The flavors that define and dominate this jerky starts with the strong sweetness, along with a fruity pineapple in the background. But then it's the unique flavor of Ghost Peppers that take over. The saucy combination of worcestershire, seasonings, and even beef stock, become noticeable.

Considering this also marketed as "soy free" and "gluten free", the use of worcestershire, beef stock, and other seasonings as an alternative to soy sauce works pretty well. I can taste its influence, and creates a backdrop that lets the Ghost Pepper flavor stand out well.

The meat consistency seems pretty good. This is a brisket cut, sliced thin to medium, and has a typical jerky chewiness, though still moist. I don't see any fat on these strips, though light stringiness, which seems expected for a brisket cut.

Verdict: This Ghost Pepper variety from Jerky's Gourmet does a great job of giving you the full experience of a Ghost Pepper infused jerky with its sharp, tongue-piercing heat, and its fruity, peppery flavor. But it doesn't stop there, the saucy marinade of worcestershire, beef stock, and seasonings makes for a great alternative to the soy sauce used by so many other brands. The strong sweetness and the light pineapple background creates for a nice contrast to the fiery heat and pungent Ghost Pepper flavor. It's a well balanced jerky that gives you a lot to think about in each bite.

Chef Craig's Beef Jerky - Original

One the newest jerky brands on the market is Chef Craig's Beef Jerky. A product of CJM Products, it's based out of West Kingston, RI.

It's the idea of Craig Mitchell, who a few years ago, had sent me samples of his own homemade jerky, with the intent of launching a business someday. Mitchell received his Culinary Arts degree from Johnson & Wales University, and has been cooking professionally since 1978.

As of this review, the only flavor Chef Craig's offers is this Original.

Ingredients

Beef, brown sugar, soy sauce, hot sauce, liquid smoke, browning sauce, worcestershire sauce, black pepper, steak seasoning, red pepper, lemon pepper, garlic, onion, chili powder, chipotle chile pepper.

Taste

The first thing I taste from the surface of these pieces is a saucy sweetness with some smokiness mixed in. It's almost like a sweet & smoky combination of worcestershire, soy sauce, and au jus (think French Dip). A light burn begins building.

The chewing flavor brings in a natural meat flavor, but with some citrus-like tanginess. The burn continues to build up.

For being the company's Original flavor, it's anything but plain. In fact, it's very flavorful, with a well-seasoned marinade that tastes much different than many other brands. The tanginess in the chewing livens up the snacking, while the natural meat flavor satisfies the carnivore in me.

It also has a moderate level of heat in this, something I'd rate on my personal heat scale as "medium" (level 3 out of 5). But I don't really taste much of the chile pepper flavor, perhaps just a faint bit reaching through the heavier saucey-seasoned marinade.

The flavor of this jerky seems to build up higher as the chewing goes on. When I put a piece into my mouth, the flavor starts out low and gradually increases with each chew. You could suck on a piece without chewing, and almost get the same effect. There's enough flavor in these meat slices that you can get a lot of it without chewing.

The level of saltiness in this feels moderate, maybe a touch above.

Overall, what you're going to get is a well-seasoned marinade with a very saucy flavor, much like a trio of worcestershire, soy sauce, and french dip au jus, along with a noticeable natural meat flavor, a nice tanginess in the chewing, and moderate amount of heat.

Meat Consistency

These are slices of whole meat, sliced into bite-sized pieces of medium thickness. There's a fair amount of smaller sized bits too.

This is a dry jerky with a slightly sticky surface feel. These pieces have a good deal of flexibility, and seem slightly rubbery.

The chewing texture starts out with that slight rubbery feel, and offers a light bit of chewing resistance. A few chews into it and it starts to soften. It begins to take on a very meaty resemblance, and by the time its chewed down to a soft mass, it feels very much like a piece of steak cooked medium-well.

I don't see much fat on these pieces and found no gristle or tendon. I don't encounter any stringiness, but felt a few pieces of unchewable tissues. It's mostly all meaty.

In terms of clean eating, it's mostly clean. My fingertips do collect a light bit of stickiness, but not enough to require a licking or wiping before touching my keyboard.

Rating

This Original beef jerky from Chef's Craig's tastes far from ordinary, packing in a lot of good flavors. It has a very tasty marinade, more like a combination of worcestershire, soy sauce, and french dip au jus, but with a good deal of sweet and smokiness mixed in.

But then it adds a nice natural meat flavor with a citrus tanginess. Throw in a touch of chile pepper flavor and a moderate level of heat, and it creates a very impressive flavor profile, and not overly salty

The meat consistency is overall good. It starts out with a light rubbery feel, but manages to chew down to a steak-like texture. It's very meaty with little to no stringiness or unchewable tissues. Collecting together the tiny bits of meat can provide something of a hindrance, but overall not that bad.

For me, it was the impressive flavor that opened my eyes and made me think, "Wow, this is great!"

My recommended beer pairing for this, go with a porter, such as the Sierra Nevada Porter, or the Stone Smoked Porter.

The Patriot Brands Beef Jerky is a new brand that launched in February of 2018 by James Napier of Cuba, MO. The company also markets a line of hot sauces under the same brand.

Napier seems well-known and well-liked by many as a patriot with his beard dyed red, white, and blue. The name "Patriot Brands" stems from his overwhelming support of the United States and the people who have fought for it. He's associated with "The Patriot Church", a congregation also based out of Cuba, MO.

This "Sweet 'n Sassy" flavor described by the company as a barbecue flavored jerky, going on to say that, "A great Almost Hickory flavored BBQ bringing a sweeeeet taste in every bite, with just a tad of Sass... Not Hot, but mild enough it's got a little Taste of heat"

The first taste that hits the tongue is a cured meat flavor, along with a light salt, and hints of tomato. There's a faint sweet too. The chewing brings on more of the meat flavor, with maybe touches of onion and garlic seasoning. There's a very weak level of heat that comes in at the end.

For being named, "Sweet 'n Sassy", and further described as a barbecue flavored jerky, I don't really identify. It's not really sweet, though there's a faint bit of sweet that I can pick up. But I think most audiences would not find any sweet in this. As a barbecue flavored jerky, I don't identify at all. I find no real barbecue flavor. I don't really pick up any hickory smoke flavor either. I do, however, agree with the company's description of having, "a little taste of heat", because it's very weak, very faint, in the back of the mouth.

Otherwise, the primary taste profile is a moderately salted, cured meat flavor, with just a light amount of onion and garlic seasoning.

These are thick slices of beef, soft, tender, and slightly moist. It starts out meaty, somewhat rubbery, but eventually chews down into something steak-like. I do see some pieces with light fatty streaks, and I did encounter some unchewable tissues, but overall good.

Verdict

This Sweet 'n Sassy beef jerky from The Patriot Brands is not really sweet by any means, but it does seem to generate a little bit of sass with a faint bit of spiciness. It's still, however, mild to our taste buds, but it's more like the kind of heat you get after sprinkling some black pepper on your eggs, which isn't really all that much. Otherwise, the profile is just a cured meat flavor with a light garlic and onion seasoning, and little else. However, the thick, tender, semi-moist slices are a joy to chew, offering up a meaty, and almost steak-like texture. But flavorwise, this seems plain and unremarkable.

According to the company, the Whiskey Hill Smokehouse brand focuses on exotic meats and more exotic recipes than The Jerky Hut and the Bakke Brothers lines. It also focuses on all natural ingredients and its jerky varieties are all marked as "Gluten Free".

Whiskey Hill Smokehouse doesn't make any marketing claims on this Gator Jerky aside from being low fat, high protein, and that it "tastes like chicken".

The first flavor I pick is sweetness, followed by a light salt, and a light fishy flavor. The chewing brings on the natural meat flavors, while the black pepper starts building. There's a faint garlic in the background.

For being an alligator jerky, you get a lot of the natural alligator meat flavors in this. The flavor is not as fishy as other brands of alligator jerky I've reviewed, but it still retains some fishiness which is just a fact of gator jerky. On the other hand, there's a more significant fishy aftertaste that lingers for 15 to 30 minutes. Aside from the sweetness and black pepper, there's not a lot of other seasonings that get in the way. I doesn't at all taste like chicken as the company claims on its website.

Otherwise, the primary taste profile is the natural alligator meat flavor laden with lots of sweet, a fair amount of black pepper, light salt, and traces of garlic. It's fairly mild, despite the black pepper seasoning.

The meat consistency is great. These appear to be strips of pure meat. I've had a lot of other gator jerky brands that include quite a bit of fat and chewy tissues, and this has none of it. The chewing starts out rubbery, which is fairly common for alligator jerky, but it does chew down into something more meat-like. Overall, it's chewy, yet still quite easy to get through. Handling these pieces will result in a fishy smell on your fingers.

Verdict

This Gator Jerky from Whiskey Hill Smokehouse does a great job of giving strips of pure alligator meat instead of being laden with chunks of fat and tissues that many other gator brands tend to do. You get a lot of alligator meat flavor in these strips, with a minimal level of fishiness. Despite the stronger sweet and fair amount of black pepper seasoning, this jerky is minimally flavored to let the natural goodness of gator to come through. While many other alligator jerky brands use a 50/50 blend of chopped alligator and chopped beef, Whiskey Hill Smokehouse is giving you 100% whole muscle gator meat, which other brands can easily let become too fishy. But this brand manages to keep the fishiness down, and the natural flavors up. So kudos to them. I'm still staying away from a 5-star rating on this because as good of a job that Whiskey Hill Smokehouse has done with this, you have to be an absolute alligator meat lover to be thrilled by gator jerky. It's one of those meats better suited for gumbos and jambalayas.

Grandpa's Beef Jerky - Original Hickory

Grandpa's Beef Jerky is a brand started by Jacob Piercy, based out of Fishers, Indiana. Piercy remembers being a kid and watching his grandfather hanging deer meat for jerky. Eventually, his grandfather handed down the recipe and process.

Today, Piercy sells packages of Grandpa's Beef Jerky at farmers markets across Indiana and online too, allowing jerky fans across the USA to enjoy a family legacy.

This "Original Hickory" is said to be Grandpa's most requested variety, and is made from top-round-steak. It's marked with a heat-rating of "Medium".

Review

The first thing I taste right away is a smokiness, followed by a light salt and touches of sweet. There's a wee bit of natural meat flavor that comes in later, along with a low-level spiciness.

As far as being labeled "Hickory" and a heat-level of "Medium", it seems to be stand up well. It definitely has a noticeable hickory smokiness throughout the chewing, while the level of heat is low, perhaps "Mild Medium" on my heat scale (level of 2 out of 5).

Otherwise, the primary taste profile is that of a hickory smoke-laced seasoning blend more weighted on the saltiness. There are swashes of garlic, onion, and cayenne pepper.

The meat consistency is chopped and formed beef, shaped into bite-sized strips. It seems to have good jerky chewiness without being tough, and no noticeable bits of bone or gristle. Once chewed down soft, they take on a meaty texture, almost steak-like. They handle cleanly.

Verdict

This Original Hickory variety from Grandpa's Beef Jerky bursts with savory seasonings and smoky hickory, living up to its flavor name. I like the bite sized pieces for snacking, and I like the meaty, almost steak-like chewing texture. It has an old fashioned taste, perhaps supportive of the "Grandpa's" brand name, reminding me of jerky sold in jars in country stores. It's a very addictive jerky. In comparison to hundreds other brands of Original variety I've reviewed, it does a great job of differentiating itself. Grandpa's Beef Jerky is a brand started by Jacob Piercy, based out of Fishers, Indiana. Piercy remembers being a kid and watching his grandfather hanging deer meat for jerky. Eventually, his grandfather handed down the recipe and process.

Today, Piercy sells packages of Grandpa's Beef Jerky at farmers markets across Indiana and online too, allowing jerky fans across the USA to enjoy a family legacy.

This "Sweet Teriyaki" is described as, "...smoky, salty and sweet in the best way", and is marked as, "Mild".


Ingredients

Beef, seasoning (sugar, salt, onion & garlic powder, molasses granules, monosodium glutamate, spices (with jalapeno), paprika, citric acid, spice extractives, silicon dioxide and soybean oil), water, cayenne pepper, dextrose, salt, natural smoke flavor, sodium erythorbate, sodium nitrite.

Review

The first thing I taste right away is a light sweet and bit of oiliness. The chewing brings on some salt, along with touches of onion and garlic, and a faint spiciness.

For being labeled as, "Sweet Teriyaki", it doesn't hold up. The sweetness is too light for something that bills itself as "Sweet", and the teriayki flavor doesn't really strike me as Japanese-style teriyaki. I don't pick up the soy sauce typically found in Teriyaki, nor the ginger, or the rice wine.

Otherwise, the primary taste profile is that of a moderately salted seasoning of onion and garlic, lightly sweet, with touches of spiciness. There's a faint natural meat flavor that comes in late.

The meat consistency is chopped and formed beef, shaped into bite-sized strips. This feels more soft than the company's Original variety, and less meaty in the chew. It's like a more dry summer sausage. It also handles a bit more oily.

Verdict

This "Sweet Teriyaki" variety from Grandpa's Beef Jerky didn't really give me the higher level of sweetness I had expected from its namesake, and didn't quite give me the Japanese-style Teriyaki I've come to expect. But on its own merits, it still generates a moderate snackability for its mild onion and garlic flavor, and may be preferable for those who want a softer, easier chew.
