Ayoba-Yo is a brand of biltong and droëwors owned by Ayoba-Yo USA, based out of Oakton, VA. The brand got started in 2013.

Co-founded by Wian van Blommestein, Ayoba-Yo is a family run business that focuses on South African-style meat snacks. Made in a USDA-inspected facility, the company's biltong and droëwors is made from top round and spiced with an old family recipe. It's free of artificial ingredients and preservatives.

Ayoba-Yo describes their brand of biltong as being gluten-free, and, "...a tender piece of beef with a naturally explosive flavor."

Review

The first flavors that hit my palate is a blend of vinegar and coriander, with a light saltiness. The chewing brings on the natural meat flavors, with a little more salt and a bit of tanginess.

As biltong, this knocks out that traditional, South African-style flavor. The vinegar and coriander are well pronounced, giving this a lively flavor that excites the palate. Yet, the natural meat flavors come through well also, with an aged, marbleized flavor, satisfying the meat-tooth and carnivore in many of us.

Overall, I'd describe the primary taste profile as a natural meat flavor, spiced with blend of coriander, vinegar, and salt, giving this a tangy, meaty, chewing.

The meat consistency is excellent. Marbelized beef is sliced thin into bite-sized pieces. It feels dry, though soft. Chewing is easy, very meaty, and once chewed down soft, feels like italian deli meat such as capicola or prosciutto.

Verdict

This traditional biltong from Ayoba-Yo offers up a flavor that is unmistakably South African, mild in spice, but lively in character, it's irresistible for snacking. If anything differentiates Ayoba-Yo from other biltong brands is its tangy, seasoned flavor that seems to waken the senses. The marbleized meat flavor, and the tender meaty chewing, scores points with meat snackers, and should welcome traditional jerky aficionados into another realm of face-stuffing charcuterie.

Jerky Dynasty - Hot and Spicy

Jerky Dynasty is a brand started by Chris Miller. It actually started a few years ago as an online retailer of jerky, offering brands like Lawless Jerky, Jeff's Famous Jerky, and others. Recently, the company launched its own line of jerky aptly named, "Jerky Dynasty".

According to Chris, Jerky Dynasty is "old fashioned", clarifying that it's hand cut, hung in a smoke house, with no liquid smoke.

This Hot and Spicy variety is described by the company simply as, "sure to set your taste buds ablaze".

Ingredients

Beef, water, sugar, salt, hydrolyzed soy protein, worcestershire sauce powder, crushed red pepper, cayenne pepper, garlic powder, onion powder, flavoring, hydrolyzed vegetable protein, granulated garlic, black pepper, cure salt, corn syrup solids, cayenne pepper, red pepper.
Review

The first flavors that come to me are a light salt and light smoke. A bit of garlic comes in later, along with a light spiciness. The chewing brings on a little more smokiness, along with a bit more garlic and onion. The heat builds up some more.

For being advertised as, "hot and spicy", and "sure to set your taste buds ablaze", it holds up somewhat. There's definitely a spiciness to this, but not necessarily "hot" and certainly doesn't set my taste buds ablaze. I'm certain, however, if you have a low tolerance to hot spices, this would be hot. But then again, if you're a spicy food lover, you might see this as light or moderately spicy. I'd rate this on my heat scale as, "medium" (level 3 out of 5).

Otherwise, the primary taste profile is that of a light wood smoke, with a salty, garlic and onion flavor. There are touches of cayenne and chile pepper flavors to back that up.

The meat consistency looks excellent. Practically all meat, mostly tender, soft, yet retaining some chewiness. It's very meaty, practically a steak-like chewing texture.

Verdict

This Hot and Spicy beef jerky from Jerky Dynasty delivers a noticeable spiciness, though not hot enough to set my taste buds ablaze. If you don't tolerate spiciness, you'd never buy this. On the other hand, if you love spicy snacks, you might find this not hot enough. To add to that, I don't taste much of the cayenne or red chile pepper flavors. Otherwise, it's very much comparable to the company's Original variety, just with a moderate level of heat thrown in.

Chef Craig's Beef Jerky - Original

One the newest jerky brands on the market is Chef Craig's Beef Jerky. A product of CJM Products, it's based out of West Kingston, RI.

It's the idea of Craig Mitchell, who a few years ago, had sent me samples of his own homemade jerky, with the intent of launching a business someday. Mitchell received his Culinary Arts degree from Johnson & Wales University, and has been cooking professionally since 1978.

As of this review, the only flavor Chef Craig's offers is this Original.



Ingredients

Beef, brown sugar, soy sauce, hot sauce, liquid smoke, browning sauce, worcestershire sauce, black pepper, steak seasoning, red pepper, lemon pepper, garlic, onion, chili powder, chipotle chile pepper.

Taste

The first thing I taste from the surface of these pieces is a saucy sweetness with some smokiness mixed in. It's almost like a sweet & smoky combination of worcestershire, soy sauce, and au jus (think French Dip). A light burn begins building.

The chewing flavor brings in a natural meat flavor, but with some citrus-like tanginess. The burn continues to build up.

For being the company's Original flavor, it's anything but plain. In fact, it's very flavorful, with a well-seasoned marinade that tastes much different than many other brands. The tanginess in the chewing livens up the snacking, while the natural meat flavor satisfies the carnivore in me.

It also has a moderate level of heat in this, something I'd rate on my personal heat scale as "medium" (level 3 out of 5). But I don't really taste much of the chile pepper flavor, perhaps just a faint bit reaching through the heavier saucey-seasoned marinade.

The flavor of this jerky seems to build up higher as the chewing goes on. When I put a piece into my mouth, the flavor starts out low and gradually increases with each chew. You could suck on a piece without chewing, and almost get the same effect. There's enough flavor in these meat slices that you can get a lot of it without chewing.

The level of saltiness in this feels moderate, maybe a touch above.

Overall, what you're going to get is a well-seasoned marinade with a very saucy flavor, much like a trio of worcestershire, soy sauce, and french dip au jus, along with a noticeable natural meat flavor, a nice tanginess in the chewing, and moderate amount of heat.

Meat Consistency

These are slices of whole meat, sliced into bite-sized pieces of medium thickness. There's a fair amount of smaller sized bits too.

This is a dry jerky with a slightly sticky surface feel. These pieces have a good deal of flexibility, and seem slightly rubbery.

The chewing texture starts out with that slight rubbery feel, and offers a light bit of chewing resistance. A few chews into it and it starts to soften. It begins to take on a very meaty resemblance, and by the time its chewed down to a soft mass, it feels very much like a piece of steak cooked medium-well.

I don't see much fat on these pieces and found no gristle or tendon. I don't encounter any stringiness, but felt a few pieces of unchewable tissues. It's mostly all meaty.

In terms of clean eating, it's mostly clean. My fingertips do collect a light bit of stickiness, but not enough to require a licking or wiping before touching my keyboard.

Snack Value

Chef Craig's Beef Jerky sells this Original variety from its website at a price of $28.00 for package of 10 (each package is 1.75oz). Shipping is $5.95. That works out to a price of $1.94 per ounce.

For general jerky snacking purposes, at the $1.94 per ounce price, it's a good value. I'm getting a great overall flavor, with a good meat consistency and good chewing texture. Compared to major brands of jerky sold in stores, it's priced about the same, but provides much better flavor and a little better chewing.

Rating

This Original beef jerky from Chef's Craig's tastes far from ordinary, packing in a lot of good flavors. It has a very tasty marinade, more like a combination of worcestershire, soy sauce, and french dip au jus, but with a good deal of sweet and smokiness mixed in.

But then it adds a nice natural meat flavor with a citrus tanginess. Throw in a touch of chile pepper flavor and a moderate level of heat, and it creates a very impressive flavor profile, and not overly salty

The meat consistency is overall good. It starts out with a light rubbery feel, but manages to chew down to a steak-like texture. It's very meaty with little to no stringiness or unchewable tissues. Collecting together the tiny bits of meat can provide something of a hindrance, but overall not that bad.

For me, it was the impressive flavor that opened my eyes and made me think, "Wow, this is great!"

My recommended beer pairing for this, go with a porter, such as the Sierra Nevada Porter, or the Stone Smoked Porter.

Grandpa's Beef Jerky - Cherry Chili

Grandpa's Beef Jerky is a brand started by Jacob Piercy, based out of Fishers, Indiana. Piercy remembers being a kid and watching his grandfather hanging deer meat for jerky. Eventually, his grandfather handed down the recipe and process.

Today, Piercy sells packages of Grandpa's Beef Jerky at farmers markets across Indiana and online too, allowing jerky fans across the USA to enjoy a family legacy.

This "Cherry Chili" is described as being made from, "Montmorency cherries and Thai chilies", and is marked as being, "Extra Hot".

Ingredients

Beef, cherries, seasoning (hydrolyzed corn syrup & wheat gluten protein, salt, onion powder, spice, soy bean oil), water, dried cherries, cayenne pepper, dextrose, natural smoke flavor, sodium erythorbate, sodium nitrite.

Review

The first thing I taste right away is a light smoke, and hints of chili powder. The chewing brings on more of the chili powder flavor, but with some salt and seasonings. There's a light bit of heat in the background, and touches of natural meat flavor.

For being marketed as, "Cherry Chili" and as "Extra Hot", this holds up partially. I do taste the "chili" flavor, mainly as chili powder with some cayenne flavor. There is no cherry flavor to speak of, nor anything fruity, sweet, or even tart. It's not extra hot either. It does have a moderate level of heat, but nothing close to the high level of heat the packaging claims to offer.

Otherwise, the primary taste profile is that of a salty, seasoned, chili powder flavor, with some cayenne pepper for flavor and heat.

The meat consistency is chopped and formed beef, shaped into bite-sized strips. It has soft chew, comparable to the company's "Sweet Teriyaki", and still a meaty texture, but not exactly steak-like.

Verdict

This Cherry Chili variety from Grandpa's Beef Jerky sounded tantalizing with its cherry infusion, but I found no cherry flavor at all. It wasn't "extra hot" as the packaging claimed, but moderately hot. I still found a snackable flavor overall, but otherwise was left feeling disappointed that I couldn't get what I was promised with the cherry flavoring and the extra hot heat.

West Virginia Beef Jerky

West Virginia Beef Jerky is a brand started by Wayne and Patti Burdette of Alderson, WV back in 1996.

Recently, the couple teamed up with meat processor named Peerless Food Service to take their brand into the competitive business of gourmet jerky. Produced in small batches, hand packed and graded, West Virginia Beef Jerky is claimed to be nitrate-free.

The company describes their jerky as, "Cowboy jerky", and as, "only a Mountaineer can make beef jerky this good".

Ingredients

Solid strips of beef, water, soy sauce, worcestershire sauce, cayenne pepper sauce, black pepper, onion powder, garlic powder.

Review

The first flavors that hit my palate is the saucy combination of worcestershire and soy sauce, along with the garlic and onion powder seasoning. The chewing brings on a light natural meat flavor, along with a faint bit of heat, and a light black pepper.

I'd agree that this has a "cowboy style" flavor and does seem to evoke style of something more rugged and manly with its drier meat consistency, peppery flavor, and bold marinade. It's not a soft and tender chew, but not tough either. It has a dry, woody texture instead of the moist, soft chew you now find in large chain shops.

Otherwise, the primary taste profile is a salty, saucy marinade of worcestershire and soy sauce, boosted with garlic, onion, and black pepper. It's not sweet at all, and almost has a fried steak flavor as opposed to grilled. It's not hot either, but is still lightly spicy from the black pepper and cayenne sauce. I'd rate the heat at "mild medium" (level 2 out of 5).

The meat consistency looks really good. It appears to be all meat with little to no fat visible. The chewing is dry, but very meaty and steak-like, similar to a well-done cooked New York Strip. It's not a soft chew, but not tough either.

Verdict

West Virginia Beef Jerky definitely lives up to its own description of "cowboy style" and its Appalachian ruggedness with its bold flavor, light spiciness, and meaty, steak-like chewing. It's definitely not the tender and moist styles popular in white-collar neighborhoods, nor the sweet and fruity flavors found in college-towns. It's much more masculine, perhaps best for guys who like to wake up in the morning by throwing a steak into the pan, and grabbing a cold-one from the fridge.

Bounce Jerky - Spicy Pineapple

Bounce Jerky is a new brand launched by Patrick Bounce and his partner and fiance Amber Czech, based out of Essex, MD. A few years ago Patrick decided to direct his 10 years of culinary work into making jerky. After finding success in selling through eBay, they decided to take things to the next level.

The brand uses grass-fed Black Angus eye of round raised on Amish farms in Pennsylvania. Meat is hand sliced, while the marinade uses natural products like locally harvested honey, kosher salt, and gluten-free soy sauce. Finally, the jerky is smoked over apple, cherry, or hickory wood chips.

Finally, each online order can be customized to the customer by making it more hot, or less hot.

This Spicy Pineapple is said to be Bounce Jerky's best seller. It contains dehydrated pineapple chips.

Review

The first thing that hits my palate is the smoke flavor, followed by the soy sauce along with a noticeable heat. The chewing brings on the natural meat flavors, with touches of tanginess and a light garlic.

Meanwhile, the pineapple chips are soft and moist. When eaten with a piece of jerky, together they create this great contrast of sweet, fruity, tangy, with savory, smoky, salty, that makes this quite addicting.

The heat seems to sit just above moderate, at a "Medium Hot" rating (level 4 out of 5). It has enough heat to create a tingling on the scalp and a little watering of the eyes.

Overall the primary taste profile, when both the beef and pineapple are eaten together, is an even blend of spicy, fruity, smoky, sweet, and salty. The beef largely sits on the smoke flavor and soy sauce, while the pineapple is largely tangy and fruity. Both are quite spicy, however.

The meat consistency seems mostly all meat. The chewing is dry, and requires a little bit of extra work to chew through. Once chewed down soft, it feels like real steak, cooked well done. Eating with piece of pineapple, however, seem to mitigate that.

Verdict

This Spicy Pineapple from Bounce Jerky is surprisingly good when both jerky and pineapple are eaten together. The pineapple has a rich tangy and fruity flavor, not like the heavily-sugared dried pineapple you get in stores. The jerky itself has a great smoky flavor thanks to the use of real smoke woods, though otherwise I found it unremarkable compared to other jerky brands. But the two together create a very rich, contrasting flavor that's quite amazing.

4 Seasons Jerky - Teriyaki Lime

4 Seasons Jerky is a new brand that hit the market last month. Launched by a guy named, "Thom", short for Thomas, the company is based out of Highland, CA. Thom is an avid outdoorsman, and is outside all year-round, hiking, boating, snowboarding, to name a few.

4 Seasons Jerky uses lean round or flank cuts of meat, marinated for 24 hours.

This Teriyaki Lime is described by the company as, "...a splendid mix of Japanese teriyaki marination and citrus lime to give a delicious tangy sweet taste!"

Ingredients

Beef, teriyaki sauce, soy sauce, black pepper, lime juice, worcestershire sauce, smoke liquid, garlic powder, onion powder, red crush pepper, sugar, other spices.

Review

The first flavors that hit my palate is the teriyaki sauce, followed by a light natural meat flavor. Light levels of spicy heat comes in after. The chewing brings on a marbleized, natural meat flavor, with touches of garlic and onion, a little bit of smoke, and a light bit of citrus tang.

The spiciness rates a "mild medium" on my heat scale (level 2 out of 5), while the saltiness feels moderate.

For being named, "Teriyaki Lime", it holds up somewhat. I get a good deal of teriyaki flavor, but the lime is rather light. The teriyaki tastes like traditional Japanese teriyaki, though is light on the sweet. The lime isn't noticed until I get into the chewing, and then I pick up just trace amounts of citrus tang. It could certainly use more lime.

Otherwise, the primary taste profile is the marbleized, natural meat flavor mixed with the teriyaki marinade, and spiced up lightly with red pepper flakes. The meat flavor, along with the light streaks of fat, gives this jerky a natural character.

The chewing is mostly soft and tender, but still retaining some jerky chewiness. The texture feels just like real pieces of steak, and the bits of fat scattered here and there only seems to heighten that meat-chewing experience.

Verdict

This Teriyaki Lime Beef Jerky from 4 Seasons offers a wonderful, marbleized meat flavor combined with a tender, steak like chewing, that makes these chunks of dried beef seem whole and natural. While I could only find trace amounts of lime tanginess, the teriyaki flavor seemed genuine without going over the top sweet. Overall, it's hard to put down this great marbleized steak flavor and chewing, and even though it didn't quite deliver on its citrusy lime claims, I'm compelled to still give this a top rating.

Crazy Horse Beef Jerky - Steak House

It's been nearly a year since I published my reviews of Crazy Horse Beef Jerky (Original, Sweet, and Cajun). And since that time, the owners of Crazy Horse have told me that sales have been great.

Along with that, customers have asked them to launch new flavors, and so towards that request, they've launched this new "Steak House" variety. Dave and Cara Wenrich, the owners of Crazy Horse, claim to love steak sauce and felt it would add a great flavor to their jerky.

Based in Hellam, PA, Dave started making this brand of jerky based on a old family recipe that he got from his father, who received the recipe from his father, who received it from his father...

Taste

The first thing I taste from the surface of these pieces is a strong smoky flavor, followed by a sweet, steak sauce flavor. There's also a light saltiness.

The chewing flavor starts with some noticeable tanginess, more like a vinegar tanginess, along with a natural meat flavor. The saltiness is slightly increased.

For being marketed as a "Steak House" variety of beef jerky, it seems to live up to the description. I do get a steak sauce flavor, which is how the company described this. The sauce flavor is almost similar to A1 Steak Sauce, though perhaps a little more tomatoey, and maybe a little more sweet.

It actually mixes well into the strong smoky flavor. And in fact, the smokiness is probably the more noticeable flavor.

The natural meat flavor is also well noticeable, and helps to create that overall "steak house" experience.

There's also a noticeable tanginess in the chewing that has a vinegar-like quality. It seems to liven up the chewing.

The level of saltiness in this feels to be light, or moderate at best.

Overall, what you're going to notice in this is a strong smoky flavor, with a well-noticeable natural meat flavor. The steak sauce is also well-noticeable, with a light sweetness, yet still allows the smokiness and meat flavors to take the spotlight. There's a tanginess in the chewing.

Meat Consistency

These are slices of whole meat, sliced into thick strips measuring four to six inches in length, and about one inch wide.

This is a semi-moist jerky with a moist surface feel due to the wet coating of steak sauce. There's some flexibility in these strips, but will eventually crack open. Biting off chunks seems easy to do, while chewing seems mostly easy.

The chewing texture starts out feeling tender and moist, and seems to break down easily enough. It chews down to a soft mass without too much effort and time, and by that point it actually feels more dry, but still very steak-like, more like one cooked well-done.

These strips also appear to be free of any fat, gristle or tendon. However in biting off chunks and chewing, I can feel a little stringiness, and a few times I encountered some wads of unchewable tissues.

In terms of clean eating, my fingers pick up a good deal of wet, sticky sauce, enough to require a licking and wiping on my jeans before touching the keyboard.

Snack Value

Crazy Horse Beef Jerky sells this Steak House variety at a price of $28.99 for one pound, and that price includes the shipping. That works out to $1.81 per ounce.

For general jerky snacking purposes, at the $1.81 per ounce price, it's a good value.
I'm getting a lot of snackability for an overall great flavor, good meat consistency, and good chewing texture. That price is comparable to what you'd pay at the grocery store for major brands of jerky, yet this offers far more snackability.

As a "Steak House" variety, at the same $1.81 per ounce price, it's also a good value. I'm getting a flavor that I do associate with eating a steak at a steak house, mostly for its steak sauce flavor and its strong smoky, natural meat flavor.

This Steak House variety from Crazy Horse Beef Jerky offers a well-noticed steak sauce flavor along with a strong smoky, natural meat flavor, that should give you a good feeling of chomping down a New York Strip slathered in steak sauce.

It's actually comparable to the company's Original variety I reviewed a year ago, with a similar smokiness, natural meat flavor, and even that tanginess in the chewing, but with the addition of steak sauce for an added flavor dimension.

Fairly easy to chew and eat with its soft, moist consistency, it seems to provide a good chewing experience to satisfy the discriminating meat snacker.

My recommended beer pairing for this, try a porter, such as the Anchor Porter or Stone Smoked Porter. The darker roasted malt should compliment the stronger smoky, meat flavor well.

Review

The first flavors that hit my palate is a lightly salty seasoning of garlic and onion, with a noticeable black pepper. The chewing brings on a light lemon and a natural meat flavor, with a faint spiciness in the background. Meanwhile, the black pepper continues to ramp up.

For being marketed as "Lemon Pepper" it seems to hold up well. Both the lemon and black pepper are front and center, though the lemon is a little slow in getting there. This is not lemon zest, which you typically find in lemon-pepper seasoning mixes, this is lemon juice, hence it has a softer taste that still delivers its citrus character without being pungent. The black pepper is not overpowering, however, but enough to take spotlight.

Otherwise, the primary taste profile is a seasoning blend of salt, garlic, onion, and black pepper, boosted with the citrusy flavor of lemon. The natural meat flavor makes up a big component of the flavor, with a marbleized flavor much like its Teriyaki Lime sibling I reviewed last week.

The meat consistency is chewy, and not quite as tender as the company's Teriyaki Lime Beef Jerky, but still has the steak-like chewing texture. It's still just as marbleized, and has the marbleized flavor.

Verdict

This Lemon Pepper Beef Jerky from 4 Seasons is based on a delicious marbleized meat flavor that brings out a man's natural urge to chew animal flesh. The softer lemon juice flavor delivers its citrus character without taking away from the beefy-goodness, while the black pepper follows suit in spicing things up without dominating the palate. What you're left with is a beef-focused flavor and a steak-like chewing texture for carnivores who crave the spicy-citrusy combo.

Palm Springs Beef Jerky - Garlic Cracked Pepper

Palm Springs Beef Jerky is a brand of Jerky Galore, based out of Palm Desert, CA. It recently launched earlier this year, and sells locally to outlets in the Palm Springs, CA area, and nationally through its website.

The brand uses USDA inspected American beef, marinated for 12-24 hours and slow cooked. They add no preservatives and claim their jerky is lower in sodium than most brands.

This "Garlic Cracked Pepper" is marketed as the company's signature flavor, describing it as a, "perfect balance of rich beef flavor, fragrant cracked pepper and perfect balance of garlic".

The primary taste profile is largely a tangy, sweet vinegar laden with a sharp, black pepper and soft garlic. There's a light bit of heat from the garlic and black pepper, and a light natural meat flavor in the chewing.

The meat consistency and chewing texture is excellent. This looks to be beef brisket, and as such has some stringiness, but not as much as other brands have. Otherwise, it chews very tender with minimal effort. It's lightly moist, and bursts with flavor. The chewing texture is that of soft steak.

Verdict

This Garlic Cracked Pepper from Palm Springs Beef Jerky punches out a big flavor of tangy sweet vinegar mixed with a savory worcestershire, and delivers a good dose of cracked pepper and garlic. Jerky by Art was established by Arthur Sandoval in 2004, based out of Albuquerque, NM.

As an iron worker, Art started making carne seca (Mexican-style jerky) at home for his own pleasure. He would take some to work and sell it to co-workers. He was selling so much of it, that he bought more dehydrators. Before he knew it, he was producing jerky all day and night. And thus became, Jerky by Art.

This Jalapeno Pepper variety is described simply as a "spicy jerky".

The first flavor I pick up is a light natural meat flavor and light salt. The chewing brings on a bit more of the meat flavor along with some light spicy seasonings.

For being marketed as, "Jalapeno Pepper", it doesn't hold up well. The jalapeno pepper is not noticeable. Instead, it's a spicy, peppery seasoning that comes out, but doesn't taste like chile pepper or jalapeno. There is, however, a light spiciness, but it may be too light to pass as jalapeno.

Otherwise, the primary taste profile is a mildly salty, lightly spicy, moderately seasoned, natural meat flavor. It's comparable to a deli roast beef flavor.

The meat consistency seems excellent, lightly marbleized with nothing stringy or unchewable. It's dry, with a light crunch, but not tough. It actually breaks apart and chews somewhat easily. It's very much like other jerky brands from New Mexico, highly dry, lightly crunchy, yet still chews down to a steak-like texture.

Verdict

This Jalapeno Pepper variety from Jerky by Art doesn't really offer much of any jalapeno pepper flavor, or even enough heat that one might expect. But on it's own merits, it still has a light spiciness and enough seasonings to create a satisfying flavor, it just doesn't go above and beyond the call of duty. Otherwise, it's classic New Mexico-style jerky, dry, lightly crunchy, and very meaty and steak-like.

Lawless Jerky - Aloha Teriyaki

Next in the series on Lawless Jerky is this Aloha Teriyaki beef jerky. See my previous review of their Japanese Curry beef jerky.

Lawless Jerky is a new brand created by a licensed attorney named Matthew Tolnick of Santa Monica, CA. Making jerky started from his days in college when he and his fraternity boys needed sustenance through long evenings of partyingstudying. But today, Lawless Jerky has grown into a thriving business and Tolnick has moved full steam ahead with it, producing his jerky in a USDA inspected facility.

This Aloha Teriyaki is described by Tolnick as the best of American and Japanese cuisines blended together, sweet from brown sugar and 100% pure Hawaiian pineapple juice, it's spiced with ginger, garlic, and onion, with some Asian inspired vinegar for tanginess.


Ingredients

100% US Beef, soy sauce, rice vinegar, pineapple juice, garlic, ginger, sesame seeds, onion.

Taste

The first thing I taste from the surface of these pieces is a soy sauce flavor with a light sweetness. I can pick up trace amounts of garlic and ginger.

The chewing flavor starts with a more defined soy sauce flavor along with a good deal of natural meat flavors. I get a touch of tanginess in the chewing, and can pick up the garlic a little more.

For being marketed as "Aloha Teriyaki" it seems to fit the bill, but more so as just Teriyaki. It has what I would consider a distinctive teriyaki flavor with its sweetness, a defined soy sauce flavor, a tanginess in the chewing, and touches of pungent ginger and garlic. The only ingredient I see that would make this uniquely Hawaiian is the pineapple juice, and I don't really identify a pineapple flavor. But to be honest, I've been to Hawaii and have had Hawaiian-style teriyaki, and I'm not sure there's any difference between that and just teriyaki. So I'm not sure how to define Aloha Teriyaki.

Otherwise, the flavors that seem to define this jerky is the distinct, authentic teriyaki flavors and the natural meat flavors. Both seem to balance each other out quite well. The natural meat flavors are rich, oozing out a steak-like flavor that's hard to miss.

The level of saltiness in this seems somewhere between light to moderate.

Overall, it's a mild tasting jerky in that there's no heat or heavy spiciness, but not mild in terms of flavor.

Meat Consistency

These are slices of whole meat, cut into chunks mostly of bite-sized pieces.

This is a dry jerky with a semi-moist surface feel. Chewing seems labored, slightly tough, requiring a good deal of chewing to get through.

The chewing texture starts out with a good deal of chewing resistance, but very quickly takes on the feel of real meat, though still slightly tough. But it does chew down to a softer, easier chew, and by that point it feels like eating a piece of steak, one cooked medium-well.

I don't see any pieces of fat on these chunks, nor do I see any gristle or tendon, but here and there I did feel some stringiness in the chewing, and I did encounter some unchewable tissues on some chunks.

As for clean eating, it seems quite clean. Even though it's semi-moist on the surface, my fingers still seem clean enough to type on the keyboard.

Snack Value

Lawless Jerky has a price of $25.00 for a one pound package. Tolnick doesn't mention shipping prices, but considering the box he sent me had a $6.80 postage label, that would work out to $31.80, or a per ounce price of $1.99.

For general jerky snacking purposes, at the $1.99 per ounce price, this seems to be a good value. I'm getting a good deal of snackability for its good overall flavor and excellent meat consistency and chewing texture. It's priced similarly as the major brands of jerky found in grocery stores, yet this has a far better flavor and meat consistency.

As a "Aloha Teriyaki" variety of beef jerky, at the same $1.99 per ounce price, it's a good value again. I can identify a classic teriyaki flavor in the true Japanese style, which is far better than any of the major brands which seem to give you just sweetened soy sauce.

This Aloha Teriyaki variety from Lawless Jerky offers an excellent teriyaki that remains in the classic Japanese style, marrying together a perfect quartet of sweet, soy sauce, tangy vinegar/wine, and the pungent dashes of ginger and garlic.

On top of that is a well-defined, easily identifiable, natural meat flavor that comes out right with the first chew, tasting like morsels of marinated steak grilled medium-well, and then seasoned with garlic, onion, and sprinkles of sesame seed. All that was missing were the bamboo skewers, because this meat reminds of the Hawaiian shiskabobs grilling at farmers markets and street fairs.

I didn't, however, identify anything in this as being uniquely Hawaiian, but then again I'm not sure there really is anything distinct between Teriyaki and Hawaiian Teriyaki aside from having slices of pineapple on the side. Maybe adding some crushed pineapple into the marinade might work. Otherwise, I think it's fine. The meat is also somewhat tough, particularly the thicker, chunkier pieces. But the great flavor still managed to get me through.

Lawless Jerky recommends any beer from Maui Brewing Co to pair with this. However, I think the fruitier Wailua Wheat from Kona Brewing makes a nice companion.

Crouching Cow Beef Co. is a new brand that hit the markets this earlier this year. It was launched by guy named, "Erik" and his girlfriend Lia, based out of Everett, MA.

Lia's relatives hail from Laos, where they raised cows and produced dried beef for market. When they visited the USA, they would make small batches of this dried beef for Lia's family. The snack became a huge hit, and a business idea was born. Crouching Cow's beef jerky is made from eye of round with minimal spices and a crispy consistency.

This Original is simply described as being made using similar techniques that the ancient Lao used.

The first flavors that hit my palate is a sweetness, followed by a light salt, and touches of sesame and garlic. There's an oily flavor, much like pan-fried beef that comes in. The chewing brings on a unique, Asian-flavor, very much like the pan-fried beef but in greater definition. Hints of black pepper are noticeable.

Considering this brand advertises its ancient Laotian techniques in making dried beef, it definitely has that ethnic, South-Asian character. It actually has a pan-fried smokiness too. I actually envision myself in an Asian food market smelling the smoke billowing from an outdoor grill.

Overall, the primary taste profile is a natural meat flavor that tastes like it was wok-fried, or pan-fried, in some kind of oil, perhaps sesame, and flavored with soy sauce and garlic. The sweetness makes a significant contribution, while the black pepper is subtle. The saltiness tastes light.

The meat consistency appears to be all meat with no fat visible, though at least one piece I ate had some kind of unchewable tissue. It looks wet and sticky, and it is in fact sticky and oily to touch. But it chews dry with just a touch of initial crisp. Chewing seems overall easy to moderate, and takes on the texture of a well-done cooked steak.

Verdict

This Original variety from Crouching Cow Beef Co. delivers a unique flavor that hasn't been found elsewhere. Many other brands have tried to reproduce the Asian cooking flavors in jerky, and many have done a good job, yet they still carry a taste and chewing profile adjusted for American palates. Crouching Cow, on the other hand, tastes like it was made by Laotians, for Laotians, and nothing Americanized for mainstream audiences.

Fat Yankee Jerky is a new brand that launched in May 2016 by Keith Rainville and his wife Brenda. Both hailing from Rhode Island, they moved to Florida about 12 years ago. Keith wanted to start a new business, and decided to get into the meat snack industry after friends told him how awesome his homemade jerky is.

Fat Yankee Jerky uses hand trimmed, top round black angus beef, sliced thick. It's marinated in 6 pound batches for 48 hours, and hand tossed after 24.

This Garlic is described by the company as, "Not even your Mamma will kiss ya! yeh its Garlic but at least you won't get bitten by a VAMP!"

The first flavor that I pick up is a strong garlic. There's also a light sweet and salt, and a faint spiciness that comes in after. The chewing brings on the natural meat flavors and a light tanginess.

For being advertising as, "Garlic", it certainly holds up. It's significant enough that it probably could keep you safe during a vampire apocalypse. It even has a noticeable garlic aroma when you open the package.

Otherwise, the primary taste profile is that of a natural meat flavor with a strong garlic. It's almost like a pan-fried steak with a generous helping from the garlic powder shaker. There's a light sweet and salt thrown in. The faint spiciness continues as such, and is light enough that I'd still rate this "mild" on my heat scale (level 1 out of 5).

The meat consistency looks excellent. Thick cut strips that feel semi-moist, and slightly drier in the chewing. It chews easily, with a meaty character, and with the texture of a well-done cooked steak. Very little fat is visible, and nothing stringy or unchewable was felt.

Verdict

This Garlic beef jerky from Fat Yankee belts out a strong garlic flavor and aroma that it gets the mouth watering before you get a chance to throw one into your face. The natural meat flavors in this actually taste more like a pan-fried steak, and reminds me of cooking up a New York Strip on a Sunday morning hangover. Garlic lovers will get a savory punch and spice that livens up the senses, while jerky traditionalists will love the meaty, steak-like chewing texture. Overall, this jerky has a simple character, but manages to keep your attention with a great fried-steak flavor and a heap of garlic.

Made from feral swine, with domestic pork added, and then hickory smoked, this Wild Boar Summer Sausage offers a mild, smoked meat flavor, with a tangy vinegar, garlic, and salt profile. It definitely has a pork flavor, but nothing gamey at all.

The chewing texture is soft and moist. I found no hard bits or unchewable tissues that often found in large national brands.

Venison Summer Sausage

Made from real venison, with pork added, and then hickory smoked, this Venison Summer Sausage offers a slightly more meaty flavor, with a touch of that gamey flavor that venison is characterized by. There's a light peppery taste that comes on in the background.

The chewing texture is soft and moist, but a touch more chewy than the Wild Boar. It's pure meat, with nothing unchewable or hard.

Elk Summer Sausage

Made with real elk, this is also added with pork, and then hickory smoked. This has a touch more of a meaty flavor, without the gamey taste of the venison. It's more beefy in character with the same light peppery taste in the background.

Like the others, this is also soft and moist, and similarly chewy as the Venison. Again, it's pure meat inside, with nothing unchewable or hard.

Verdict

These summer sausages from Pearson Ranch seem to do a great job of bringing out the characteristics of exotic meat flavors, while staying true to the traditional summer sausage profile. If you like a more mild flavor, go with the Wild Boar. If you like the gamey taste, the Venison will deliver. And if you like something more beefy, the Elk is it.

A few years ago Patrick decided to direct his 10 years of culinary work into making jerky. After finding success in selling through eBay, they decided to take things to the next level.

The brand uses grass-fed Black Angus eye of round raised on Amish farms in Pennsylvania. Meat is hand sliced, while the marinade uses natural products like locally harvested honey, kosher salt, and gluten-free soy sauce. Finally, the jerky is smoked over apple, cherry, or hickory wood chips.

Finally, each online order can be customized to the customer by making it more hot, or less hot.

This Holly's Homestyle is described as a sweet flavor, with no spice, named after one of the company's long time friends.

Verdict

This Holly's Homestyle from Bounce Jerky offers an excellent, real wood smoked meat flavor, with little other seasonings to get in the way. The extra sweet flavor and moist, sticky touch, seems to heighten the smokiness. This jerky has a simple character, which makes it taste old school, yet belts out a very irresistible flavor. Add to that the moist, tender chewing, and steak-like texture, and you get the sense of eating natural, real wood smoked beef, with few ingredients.

Joe's Wicked Good Beef Jerky is a brand owned by Joe's Wicked Good Jerky Corporation, based out of Redding, CA. It was started by the husband and wife duo of Joe Nixt and Traci Nixt, who launched the brand in October 2014.

At the time, Joe had been making his own jerky for over 20 years. He's share it with friends and co-workers from his contracting business. When Traci lost her secretarial position, the couple decided to make a go at running a jerky company. I have all four of the existing flavors, starting with this "Regular Joe".

The company describes it as, "This is no regular jerky", and claiming that it has, "a ton of flavor without the spice".

Beef, marinade (soy sauce, sugar, high fructose corn syrup, mirin, water, dehydrated garlic, spice, modified corn starch, sunflower oil), marinade (soy sauce, rehydrated onions, garic, caramel, vinegar, apple juice concentrate, carrots, celery, cabbage, parsley, turnips, parsnips, natural flavors, citric acid, malic acid).

The first flavors I pick up on the palate is a noticeable sweet, with moderate salt, and a light soy sauce. The chewing brings on a bit more of the soy sauce, but mixes in something more like teriyaki, and shades of worcestershire. There's also a noticeable seasoning blend behind the scenes too complex to really dissect.

For being dubbed, "Regular Joe", it's not really all that regular. It actually has a good deal of flavor, and it's something that goes beyond the normal soy sauce-worcestershire-teriyaki blend. This stuff has a marinade flavor with hints of plum sauce, or maybe hoisin sauce, but still noticeably soy sauce. The seasoning blend is unlike the usual garlic-onion-pepper combo, and seemingly throws in a multitude of other flavors I don't often see from competing, "regular" brands.

The primary taste profile of this jerky starts with the soy sauce, but throws in some sweet, teriyaki, and worcestershire flavors, there's something uniquely Asian too, like the plum sauce or hoisin sauce I described above. It's mild in terms of spiciness, and average in terms of salt. I don't get much black pepper. I get a little more onion than garlic. Lastly, there's a light natural meat flavor that comes in the latter part of chewing, but also there's some noticeable fat flavors that mix in.

The meat consistency seems average compared to the large, national brands. I see a few spots of fat here and there, and I can even taste the flavor of fat in the chewing too. Chewing starts stiff and hard, slowly chewing down to something meaty, and somewhat steak-like. It's more like a steak cooked well done. I don't pick up much stringiness nor unchewable tissues.

Verdict

This "Regular Joe" from Joe's Wicked Beef Jerky actually stands out as something beyond regular. It has enough sweet, soy sauce, and seasonings, that it could be perceived as a bold-flavored Teriyaki variety, or something more vaguely named like, "Asian Style". In effect, it's like a soy-sauced jerky, but fixed up with lots of other flavors that it becomes interesting. The bits of fat I taste in the chewing actually add to the enjoyment, and make this taste more "real". Aside from the initial, tough chewing, it's actually a good overall jerky in terms of taste and meat consistency, and felt it was worthy of a five-star rating because it went above and beyond the call of "original".

For being named, "Cherry Smoke", and described as, "rich cherry flavor with nice smokey finish", I'd say this holds up. I do taste a fruity character, and it does have that unique cherry character, but not tart by any means. But this does have a noticeable smokey quality and aroma.

Otherwise, the primary taste profile is sweet and fruity with a light tanginess. The smoke is noticeable with a light salt and soy sauce in the background, and the natural meat flavors in the latter part of chewing. It's totally mild in spice.

Verdict

This Cherry Smoke beef jerky from Fat Yankee delivers on its advertised flavor over a meaty, steak-like chewing. The initial fruity tanginess with the sweet and smoke livens up the senses and grabs my attention for a short while. But after a few pieces, it wasn't enough to keep my attention. The natural meat flavor didn't have that pan-fried steak flavor I found in the company's Garlic Beef Jerky that I reviewed last week. This tended to taste grilled with little to no seasoning. It's actually a light tasting jerky that relies on a tangy fruit to grab attention, but needs something else to keep to keep that "wow factor" going. It's a great jerky to nibble on with pilsners and light ales.

People's Choice Beef Jerky is a brand of Peoples Sausage Company, Inc. based out of Los Angeles, CA. It's a family-run business that's been around since 1929. See our previous reviews of their jerky.

This Orange Honey Teriyaki is part of the company's "Tasting Kitchen" series, which is a line of jerky that mixes bold, eclectic ingredients, with the old fashioned style of making jerky.
