Little Bit Jerky - Spicy Asian Bit

Little Bit Jerky is a new brand that launched in February 2016, by Robert Helmcamp and Teresa Helmcamp, based out of Wichita Falls, TX.

Robert is a professional butcher of 22 years, learning the craft the "old school" way, and developed his own seasonings. Little Bit Jerky is made fresh daily from top round, and marinated for 18-24 hours.

This "Spicy Asian Bit" is described by the company as having an Asian Stir Fry taste, with a "blend of Chinese spices and just the right amount of wasabi".perfection."

Ingredients

Beef, water, natural hickory wood smoke, vinegar, chili pepper, salt onion, garlic, black pepper, crused dark red chile, hydrolyzed soy & corn protein, sugar, molasses, papain, citric acid, artificial color, wheat, soybean, cinnamon, fennel, cloves, star anise, white pepper, horseradish, mustard.

Review

The first flavors I taste is a complex seasoning blend, marked by chile pepper, salt, and perhaps clove. There's some heat building up. The chewing brings on some additional seasoning flavors, very much like Thai or Vietnamese style cuisine, along with some natural meat flavors.

For being named, "Spicy Asian Bit", and described like asian stir fry, I find that it actually does like it claims. It's not so much Japanese or Chinese, but more like Vietnamese or Thai. It's spicy too, mostly from the red chile pepper, effecting a rank of "medium-hot" on my personal heat scale (level 4 out of 5). The wasabi is hard to find, however.

Otherwise, the primary taste profile is that of salty, Asian style seasoning blend laid over a soy sauce base. The fennel and star anise comes in noticeably here and there, but the clove tends to remain constant. There's a touch of sweet as well.

The meat consistency looks really good, mostly all meat, sliced into slabs of medium thickness. I found a fair amount of stringiness in the chewing. It's dry, but flexible, and manages to tear apart with light effort. The chewing starts out quite chewy and eventually softens up enough to feel like a well-done cooked steak.

Verdict

This Spicy Asian Bit from Little Bit Jerky lives up to its claims with a Asian style flavor more comparable to Thai or Vietnamese cuisine. The addition of clove, fennel, and star anise really makes this taste unique, and drives a good deal of heat as well. It's quite salty for my preference, and perhaps the higher level makes the spice feel hotter than it really is. But like everything in Texas, this has a big flavor, despite the little name. Otherwise, it's a great jerky for spicy food addicts who love a more exotic, Asian-style flavor.

Jedidiah's Jerky - Hot Cowboy

Based on the company's top selling variety, this Hot Cowboy from Jedidiah's Jerky takes the same recipe and throws on some red chile pepper to sharpen the spurs on this here buckaroo.

Jedidiah's Jerky was started by David Coffey, a veteran of the beef jerky business, having taken his first bite of the industry in 1984, when he went to work for Polley's Beef Jerky. In 2005, he went to work for himself by starting Jedidiah's Jerky. Based out of Beatty, NV, Coffey also runs a chain of beef jerky outlets called, "Jed's Jerky", with locations throughout Nevada and California.

The "Cowboy style" from Jedidiah's Jerky is meant to be a throwback to the old days of campfire cooking, saddle sores, and pesky indians. It's like a "man's jerky", with no sugar added, just simple seasonings and lots of peppery flavor.

Ingredients

Whole slices of beef, soy sauce, lemon juice, liquid smoke flavor, black pepper, garlic, crushed chili peppers, sodium nitrate

Review

The first flavors that I pick up is a light soy sauce and some garlic. There's a light smokiness too. The chewing brings on the natural meat flavors, with a bit more soy sauce definition. There's a touch of heat noticeable.

As for being named, "Hot Cowboy", it lives up to its billing. There's certainly some heat to this, though not overwhelming. It ranks on my personal heat scale, at best, as "medium" (level 3 out of 5). Some pieces give off more heat than others. I don't pick up much flavor from the red chile pepper. But it does have that "old west" flavor, something more traditional, more manly, with no sweet stuff, no fruity stuff, and certainly nothing that a ranch cook would put in his pot of chili.

Othewise, the primary taste profile is a light soy sauce flavor, with some garlic and a touch of black pepper. The natural meat flavors are significant in this. It's a little on the salty side, but still tolerable for me.

The meat consistency also seems fitting for a bow-legged buckaroo. Lean slabs of steak, dry and chewy, but still easy to get through, feel very meaty and chew just like real bites of steak cooked well done. I find only minimal stringiness and nothing unchewable.

Verdict

This Hot Cowboy Beef Jerky from Jedidiah's seems to really define the company's namesake, a cow punchin', bronco bustin', chew that tastes and feels like nothing short of manliness. As for being named, "Hot Cowboy", imagine something more like a trail ridin' John Wayne, as opposed to the Brokeback Mountain variety; it'll back you off just a bit, but still welcome you on a cattle drive. Otherwise, enjoy some simple seasonings, a good deal of natural meat flavor, and a steak-like chewing. It may be a touch high on the saltiness, but it ain't nothing a swig of water can't fix.

Keeno's Beef Jerky - Mild

Keno's Beef Jerky is a brand owned by Gary Keeney, baesed out of Wichita Falls, TX. Established in 2010, Keeno's manufacturing process is state inspected, and the company runs an outlet store in the same building.

Keeney got into the jerky business while working at Dell Computers, where he sold bags of his homemade stuff to fellow employees. After getting laid off, he went into business for himself with the aid of a $17,000.00 prize for winning the IdeaWF competition hosted by Midwestern State University. Keeney also won the 2014 Peppers and More World Jerky Contest.

This "Mild" jerky is described by Keeno's as "a crowd pleaser of both young and old", assuming to be flavored to suit all palates and tolerances.

Ingredients

Beef, water, natural hickory smoke, vinegar, salt, onion, garlic, black pepper, dark red chili, papain, citric acid, seasoning salt, dill seed, paprika, cayenne pepper, and mustard seed

Review

The first flavors I pick up are a salty, garlic and onion. There's a light vinegar tang as well. The chewing brings on some natural meat flavors, along with a touch of dill.

For being marketed as, "Mild", I could agree on relative terms. It's more mild than Keeno's "Kickin' T-Bone Beef Jerky" that I reviewed a couple weeks ago, but it's still rather bold and flavorful. But of course, that's a good thing. On the other hand, if you're expecting a mild flavored jerky, with low seasonings, you're actually going to get the opposite.

Otherwise, the primary taste profile is a salty, garlic and onion seasoning, combined with a light vinegar tang, and hints of onion, dill, and other seasonings. Here and there, I get a burst of dill seed in the chewing. There's a natural meat flavor that comes out, but is still somewhat suppressed by the stronger salt. Strangely, this jerky has the aroma of soy sauce, even though there is no soy sauce in the ingredients list.

The meat consistency comes in thin sliced slabs, rather soft and flexible, but dry. It chews soft, but is still "chewy". It feels quite meaty, though with some stringiness, but has a texture just like a well-done cooked steak.

Verdict

This Mild Beef Jerky from Keeno's actually bursts with flavor with as much boldness as Texan pride. It's only mild in that it's not spicy hot. I find it rather salty, but still just within my level of tolerance. Otherwise, I really like the vinegar tanginess, and the addition of dill to give this jerky some lively chewing. It even has a steak-like chewing texture, and just the right chewiness between too soft and too tough. Otherwise, if you like the stronger salt seasoning, this is certainly a good jerky to keep on hand.

Joe's Wicked Good Jerky - Regular Joe

Joe's Wicked Good Beef Jerky is a brand owned by Joe's Wicked Good Jerky Corporation, based out of Redding, CA. It was started by the husband and wife duo of Joe Nixt and Traci Nixt, who launched the brand in October 2014.

At the time, Joe had been making his own jerky for over 20 years. He's share it with friends and co-workers from his contracting business. When Traci lost her secretarial position, the couple decided to make a go at running a jerky company. I have all four of the existing flavors, starting with this "Regular Joe".

The company describes it as, "This is no regular jerky", and claiming that it has, "a ton of flavor without the spice".

Ingredients

Beef, marinade (soy sauce, sugar, high fructose corn syrup, mirin, water, dehydrated garlic, spice, modified corn starch, sunflower oil), marinade (soy sauce, rehydrated onions, garic, caramel, vinegar, apple juice concentrate, carrots, celery, cabbage, parsley, turnips, parsnips, natural flavors, citric acid, malic acid).

Review

The first flavors I pick up on the palate is a noticeable sweet, with moderate salt, and a light soy sauce. The chewing brings on a bit more of the soy sauce, but mixes in something more like teriyaki, and shades of worcestershire. There's also a noticeable seasoning blend behind the scenes too complex to really dissect.

For being dubbed, "Regular Joe", it's not really all that regular. It actually has a good deal of flavor, and it's something that goes beyond the normal soy sauce-worcestershire-teriyaki blend. This stuff has a marinade flavor with hints of plum sauce, or maybe hoisin sauce, but still noticeably soy sauce. The seasoning blend is unlike the usual garlic-onion-pepper combo, and seemingly throws in a multitude of other flavors I don't often see from competing, "regular" brands.

The primary taste profile of this jerky starts with the soy sauce, but throws in some sweet, teriyaki, and worcestershire flavors, there's something uniquely Asian too, like the plum sauce or hoisin sauce I described above. It's mild in terms of spiciness, and average in terms of salt. I don't get much black pepper. I get a little more onion than garlic. Lastly, there's a light natural meat flavor that comes in the latter part of chewing, but also there's some noticeable fat flavors that mix in.

The meat consistency seems average compared to the large, national brands. I see a few spots of fat here and there, and I can even taste the flavor of fat in the chewing too. Chewing starts stiff and hard, slowly chewing down to something meaty, and somewhat steak-like. It's more like a steak cooked well done. I don't pick up much stringiness nor unchewable tissues.

Verdict

This "Regular Joe" from Joe's Wicked Beef Jerky actually stands out as something beyond regular. It has enough sweet, soy sauce, and seasonings, that it could be perceived as a bold-flavored Teriyaki variety, or something more vaguely named like, "Asian Style". In effect, it's like a soy-sauced jerky, but fixed up with lots of other flavors that it becomes interesting. The bits of fat I taste in the chewing actually add to the enjoyment, and make this taste more "real". Aside from the initial, tough chewing, it's actually a good overall jerky in terms of taste and meat consistency, and felt it was worthy of a five-star rating because it went above and beyond the call of "original".

Redneck Steak Beef Jerky - Moonshine

Next up for Redneck Steak Beef Jerky is this Moonshine variety. See my other review of their Traditional variety.

Redneck Steak Beef Jerky was created by Trae Stokes, based out of Pinellas Park, FL. Trae started the business as a way to earn a living after mortgage crash of 2008 busted his contracting business. Having grown up in the South all his life, he had mastered the skills of smoking meats. On a whim, Trae had smoked up batch of jerky and sold it at a local arts and craft show, and thus was born Redneck Steak Beef Jerky.

This Moonshine variety does not contain actual moonshine or alcohol, instead it was named thus for its little kick of heat at the end. These slices of meat are basted in sweet chili sauce, and smoked over real oak wood for 4-6 hours.

Taste

The first thing I taste from the surface of these pieces is a heavy sweetness mixed with a smokiness. A light bit of heat comes in. I can also pick up the onion flavor that was dominant in the Traditional variety.

The chewing brings in a more defined smokiness and a light natural meat flavor.

For being marketed as a sweet chili sauce variety with a little bit of kick, it's certainly fills the bill. It definitely has a forward tasting sweet chili sauce flavor, and it also has the little bit kick. It's not really hot. On my personal heat scale, I'd rank this as mild-medium (level 2 out of 5).

Otherwise, the flavors that define this jerky starts with the sweet chili sauce, with its heavy sweetness, light chile pepper flavor, and touch of heat. The oak wood smoke adds the next most dominant component, with that sliced onion flavor coming in after. A light natural meat flavor along with a lighter seasoning of garlic and pepper round out the others.

The ingredients combine really well to create an experience like that of sweet Southern style barbeque, with that heavy sweetness, rich smoky flavor, and bold seasonings, in this case anchored with the stronger onion flavor. That little bit of heat and light chile pepper flavor might remind you of something more Southwest, but that thick sweetness and oak wood smoke makes me think of the deep south.

The level of saltiness in this feels moderate.

Meat Consistency

These are slices of whole meat, sliced into slabs of medium sizes, and sliced thin.

This a dry jerky with a sticky, moist surface feel. The slices are more flexible than the company's Traditional variety, due to the heavy sauce. Chewing seems mostly easy.

The chewing texture starts out feeling moist and gooey, but offers no chewing resistance. The pieces chew down quite quickly and easily and takes on a meaty, steak like feel. Once chewed to a soft mass, it feels like chewing pieces of real steak.

I found one piece with a significant piece of fat and a small streak of gristle, but otherwise didn't create any chewing trouble. I didn't encounter any stringiness and no unchewable tissues.

In terms of clean eating, this is messy. The chili sauce leaves gobs of sticky, gooey mess on my fingers requiring a licking and wiping before touching the keyboard. Just pulling pieces out of the bag makes my hands sticky.

Snack Value

Red Neck Steak Beef Jerky sells this Moonshine variety from its website at a price of $75.00 for ten 3oz packages. Add to that sales tax of $5.25, and it all works out to a price of $2.68 per ounce.

For general jerky snacking purposes, at the $2.68 per ounce price, it's a good value. I'm getting a great flavor as well as good meat consistency and good chewing texture. Compared to other gourmet brands, it's priced about the same, but offers a better snackability overall.

This Moonshine variety from Redneck Steak Beef Jerky offers a wonderful flavor like that of sweet Southern style barbeque, but with a light bit of heat and chile pepper flavor. There's rich smokiness from the real oak wood chips that makes this jerky taste like its fresh off the smoker. Add to that the bold seasonings of onion, garlic, and pepper, and this jerky can knock you senseless like a taking a swig of moonshine.

It's also easy to eat, has a good meat consistency and good chewing texture. Unlike the company's Traditional variety, which can feel crumbly and gritty, the thick chili sauce tends to make this meat feel more like real steak.

This jerky can be messy to handle, leaving gobs of stickiness on your hands and fingers. If you're wanting to snack on this stuff while driving, it might be best to have someone feed it to you, otherwise that steering wheel is going to get gnarly.

Beefy Boys Beef Jerky - Jamaican Style

Beefy Boys Beef Jerky is a brand owned by John Bailey, based out of Salinas, CA. The brand has been around since 1999.

Manufactured in their very own USDA inspected facility, Beefy Boys is made from top round sourced from a supplier located 120 miles from their plant, then marinated and cooked using an old family recipe.

This Jamaican variety is new, being made with Jerk seasonings and Scotch Bonnet Peppers.

Ingredients

Beef, red wine, water, soy sauce, red wine vinegar, jerk seasoning, brown sugar, salt, seasoned salt, spices, other flavorings.

Review

The first flavors that I pick up is light salty and peppery seasoning, with hints of the red wine marinade. Garlic and onion starts coming in, and a touch of heat is starting to build. The chewing brings on a rich natural meat flavor, with the taste of soy sauce, and faint traces of thyme and nutmeg

For being marketed as "Jamaican", it certainly holds up. I get a seasoning blend that tastes very much like Allspice, which is common with Jamaican cuisine, but I also get a light bit of chile pepper heat. I can pick up wee bit of thyme and nutmeg, also very common with Caribbean cooking. The light heat seems to register as "mild medium" on my personal heat scale (level 2 out of 5).

Otherwise, the primary taste profile is a complex seasoning blend with a moderate level of saltiness. There's a noticeable garlic component, and light chile pepper flavor. The natural meat flavors stand out well with its red wine marinade.

The meat consitency looks excellent. Seemingly all meat, sliced into thick strips that bite off easily enough. It's slightly moist that it retains a bit of softness, but overall has a typical jerky dryness. The chewing texture feels just like real pieces of steak, cooked medium well.

Verdict

This Jamaican Beef Jerky from Beefy Boys does an excellent job of delivering a complex seasoning and spice that the Caribbean island is known for. I really like the garlic, thyme, and nutmeg that stand out, and I like the light level of heat. But most of all, I like the rich natural meat flavor with its red wine marinade, and steak-like chewing texture. The thick strip cut that this Jamaican variety comes with is different from Beefy Boys other flavors, and creates more meaty-excitement because of how thick the pieces are.

The first flavors I pick up are a garlic and onion seasoning, along with a moderate salt. The chewing brings on the natural meat flavors, with some vinegar and a touch of dill.

For being marketed as, "Salsa" and "Medium Heat", with the claim of adding in bell peppers and traditional salsa ingredients, it doesn't really deliver the flavor of salsa. I don't identify the bell pepper flavor, nor the cilantro. Certainly the garlic and onion is noticeabe, but those two seem to be part of Keeno's base marinade, and pretty much a staple in all brands of jerky. Also, I don't really pick up any heat. It feels mild in my opinion, though the prominent salt seasoning could make this seem spicy.

Otherwise, the primary taste profile is that of a salty, garlic and onion seasoning blend. The hickory wood smoke flavor is noticeable, along with a light vinegar and dill seed tanginess. The natural meat flavors also make up a significant flavor, but still play a backup role to the seasonings.

The meat consistency comes in thin sliced slabs, rather soft and flexible, but dry. It chews soft, but is still "chewy". It feels quite meaty, though with some stringiness, but has a texture just like a well-done cooked steak.

Verdict

This Salsa Beef Jerky from Keeno's delivers a bold flavor of garlic and onion seasoning salt, bolstered with a tangy vinegar and dill, and a layer of hickory wood smoke. But I didn't really pick up the bell pepper or cilantro that I thought would make up the salsa profile. And I don't identify the "Medium Heat" that the package claims. Instead, it actually tastes very much like Keeno's Mild Beef Jerky that I reviewed last week, which on its own merits still makes a good jerky. If anything, this seems to be a notch lighter on the salt, which I think brings out more of the natural goodness of beef.

Crazy Horse Jerky - Chicken Jerky

The newest offering from Crazy Horse Jerky is this Chicken Jerky, available in both Original and Cajun flavors.

Chicken Jerky seems to be the new Turkey Jerky these days as more and more brands are adding it to their product line up. But where Turkey Jerky was originally introduced as the healthier alternative to beef, Chicken Jerky seems to have the flavor satisfaction that turkey never had.

Crazy Horse Jerky is running a special as of this writing where if you buy $50.00 of beef jerky, they'll throw in a free 1/4 pound bag of this chicken jerky.

Taste

The first thing I taste from the surface of these pieces is a smoky flavor, followed by a light saltiness.

The chewing flavor starts with the natural chicken meat flavor, with a slightly increased smokiness and saltiness, and touches of seasonings, primarily black pepper.

For being marketed as a chicken jerky, it certainly offers up the familiar and favorite poultry pleasantness of chicken, but in a jerky form factor. It has the chicken meat flavor, but also the chewing texture as well, albeit in a more dry, chewy jerky style.

The flavors that seem to dominate this jerky starts with the smokiness and light saltiness, along with the natural chicken meat flavors, and then touched with some spicy black pepper. I also want to say there's a faint bit of sweet in this, and hints of garlic.

The level of saltiness seems light to moderate in intensity.

Overall, it's a flavorful chicken jerky but not spicy aside from a touch of black pepper. For the most part, it's the combination of smokiness and saltiness with the natural flavors of chicken that I taste, and then graced with some seasonings.

Meat Consistency

These are slices of whole meat, sliced into strips of four to six inches in length, and sliced thick. I'm not certain, but this appears to be sliced chicken tenderloin and breast meat.

This is a dry jerky, with a slightly moist, slightly oily surface feel. There's very little flexibility, in fact it's somewhat brittle, breaking off easily with some bending. It's easy to bite off chunks and chewing is quite easy as well.

The chewing texture starts off feeling stiff, but easily breaks apart and breaks down with some light chewing. It has a dry, almost crumbly texture, and quickly renders into a soft mass. At that point, it has meaty texture very much resembling chicken meat, but a little more dry.

I don't see any bits of fat on these strips, nor any gristle or tendon. There's no stringiness. It's all very meaty and lean.

As for clean eating, it's clean. My fingers pick up just a fine film of oil, still dry enough to type on my keyboard.

Snack Value

Crazy Horse Jerky sells this Original Chicken Jerky from its website at a price of $31.99 for a one pound bag. Shipping is $2.00 flat rate (or free if you buy $40 or more). That works out to a price of $2.12 per ounce ($33.99 / 16 oz).

For general chicken jerky snacking, at the $2.12 per ounce price, it's a good value. I'm getting a great overall flavor, with great meat consistency and good chewing texture. Compared to other chicken jerky brands, it's priced about the same or slightly lower, yet offers a great flavor and meat consistency.

This Original Chicken Jerky from Crazy Horse Jerky belts out the same signature real wood smokiness and seasonings that make Crazy Horse Jerky so good, but does it in America's other favorite meat, chicken.

What I really liked with this chicken jerky is the large strips of chicken meat, tenderloin and breast meat, compared to the smaller pieces and chunks that I found in other chicken jerky brands. It's easy to chew, but still retains the meaty, chewy, character that makes for good jerky.

But it's hard to deny real wood smokiness when combined with the natural flavor of chicken, a real culinary artform in the classic American sense. The touches of seasonings are all that's needed to add some savory into making this a great jerky.

My recommended beer pairing, go with a light craft lager, such as the Trumer Pils, or the Samuel Adams Nobel Pils.

Braaitime is a brand of gourmet cured meats based out of Keansburg, NJ. The company was started in 2005 by Warren Pala. Warren immigrated from South Africa in 2001 and sought to introduce Biltong to Americans.

Warren claims to be the only brand of biltong holding true to the old world methods. "All other makers of Biltong have followed the 'jerky' method in order to achive USDA approval. They cook the meat to a certain temperature for a certain amount of time". Warren was able to get USDA approval with the help of local Italians who had already convinced USDA inspectors that their prosciutto & capacolo are shelf stable.

Biltong is a type of seasoned, dried meat whose recipe originated from South Africa. Similar to jerky in description, but tasting very much different, it's traditionally seasoned with vinegar, coriander, black pepper, and salt. Braaitime sells biltong unsliced, sliced, and flavored in Peri Peri and Garlic, and even in Venison.

Review


The first thing I taste is a combination of vinegar and coriander. A light saltiness comes in, while the coriander continues to pick up. There's also a faint tangines. The chewing brings on the natural meat flavors.

Compared to other brands of biltong I've reviewed, this definitely has more of the natural meat flavors. Think of the flavor of fresh, deli roasted beef, with light seasonings of salt, vinegar, and coriander.

There's no heat to speak of, it's very mild.

The meat consistency is excellent. It has a more dry, exterior much like American style beef jerky, but a soft, moist interior that chews like prime rib cooked medium-rare. There are light streaks of fat visible inside the meat, and a significant strip of fat on the outside. I'm told that streaks and strips of fat are an important flavor and texture component.

Slicing up this chunk of meat requires a well-sharpened knife, or else you may find it a challenge. But I think that slicing it yourself allows you to get thicker slices which I found results in more natural meat flavor.

The pre-sliced variety of biltong sold by Braaitime tends to taste a little more strong on seasonings including salt.

Other Biltong Flavors


Braaitime also offers biltong in the following flavors:

Wet & Fatty: Tastes much like the original biltong, but just a bit more moist and oily.

Garlic: Definitely a noticeable garlic presence, but not overpowering.

Peri Peri: This is the South African style of red pepper spice, similar to cayenne, but more earthy. I pick up a clear flavor of Peri Peri, along with a medium level of heat.

Venison: Presumably made from venison (although the ingredients list says "beef"), this is much more dry, and has a much different flavor. It's more salty, and has a meat flavor comparable to venison. Gamey and earthy, I'd recommend only buying this along with the company's original biltong to compare.

Verdict


This biltong from Braaitime is simply amazing! I love the more dry, chewier exterior mixing into the soft, moist interior. The light seasonings give off just enough flavor to create that classic biltong flavor, but keeps the emphasis on the natural meat flavor.

You can buy this biltong pre-sliced, but I recommend buying the unsliced, and slicing it yourself to get the full experience of slicing it thick and getting the full meat flavor.

I really liked the Peri Peri, but if you want something more mild, get the Garlic.

Keeno's Beef Jerky - Bloody Mary

Keno's Beef Jerky is a brand owned by Gary Keeney, baesed out of Wichita Falls, TX. Established in 2010, Keeno's manufacturing process is state inspected, and the company runs an outlet store in the same building.

Keeney got into the jerky business while working at Dell Computers, where he sold bags of his homemade stuff to fellow employees. After getting laid off, he went into business for himself with the aid of a $17,000.00 prize for winning the IdeaWF competition hosted by Midwestern State University. Keeney also won the 2014 Peppers and More World Jerky Contest.

This "Bloody Mary" jerky claims to be based on the same ingredients as Keeno's Salsa Beef Jerky that we reviewed last week, but throws in some Bloody Mary Mix. It also claims to be "Medium Heat".

Ingredients

Beef, Cajun Bloody Mary Mix, worcestershire sauce, onions, molasses, herbs, red pepper, black pepper, celery, ascorbic acid, natural hickory wood smoke, dark red chile, hydrolyzed soy and corn protein, sugar, citric acid, crushed red chile, green/red/yellow bell pepper flakes, dill seed, MSG, paprika, cilantro, cayenne pepper, mustard seed.

Review

The first flavors I pick up are a moderate salt, along with light garlic and onion seasonings. There's a light wood smoke flavor too. The chewing brings on some natural meat flavors, combined with a vinegar tanginess. The dill seed is more light in this than with other of Keeno's varieties.

For being marketed as, "Bloody Mary", it doesn't really have the Bloody Mary mix flavor. I'm not picking up that spicy, tomatoey flavor at all. There is, however, a slight pasty residue in the chewing that perhaps comes from the tomato juice after dehydration. But flavorwise, I don't identify the Bloody Mary mix. I also don't find the "Medium Heat" in this. It's actually more mild to me.

Otherwise, the primary taste profile is that of garlic and onion seasoning salt, with a noticeable hickory wood smoke, and a light vinegar tanginess. A light natural meat flavor sits behind the scenes, and there's just a faint trace of the worcestershire. The dill comes in through small bursts where I chew into a seed.

The meat consistency comes in thin sliced slabs, rather soft and flexible, but dry. It chews soft, but is still "chewy". It feels quite meaty, though with some stringiness, but has a texture just like a well-done cooked steak.

Verdict

This Bloody Mary Beef Jerky from Keeno's delivers a lot of flavor, but nothing that tastes like Bloody Mary Mix. It doesn't have that spicy, tomatoey flavor. It also doesn't have the "Medium Heat" that the package claims. It's actually quite mild. In fact, it tastes similar to the company's "Mild Beef Jerky", but with a little less salt, and a wee touch of worcestershire. On its own merits, it's still a good jerky in terms of taste and chewing. Adding that touch of worcestershie seems to give it just a bit more savory character. The idea of a Bloody Mary Mix marinade seems like a great idea, but it doesn't quite materialize in this.

Jedidiah's Beef Brisket Jerky - Sweet & Spicy

Jedidiah's Jerky is a brand that we reviewed before (read the reviews here). Some time ago, they revamped their line of jerky with new recipes and new branding, and moved their headquarters to Laughlin, NV to Beatty, NV. Jedidiah's Jerky also has since opened up a chain of beef jerky stores called, "Jed's Jerky" throughout Nevada and California.

This new "Beef Brisket" line replaced the company's old "Private Reserve" line, which was also beef brisket. This new recipe has much less sodium than the previous recipe. You can read the previous review of that Sweet & Spicy here.

This "Sweet & Spicy" beef brisket jerky was also named the favorite jerky in an August 2010 issue of Maxim Magazine.

Ingredients

Beef brisket, gluten free reduced sodium tamari soy sauce, brown sugar, cayenne pepper sauce, lemon juice, black pepper, granulated garlic, jalapeno powder.

Review

The first flavor I pick up on the tongue is a sweet and salty flavor. The soy sauce comes in soon, along with a touch of citrus tang, and a light bit of heat in the background. The chewing brings on a bit more definition of soy sauce, along with a noticeable black pepper. I can also pick up some of the natural meat flavors, and some fat flavor here and there.

With respect to the "sweet and spicy" claims, it seems to hold up well. The sweet is noticeable right away, but soon wears off. The spiciness lingers in the background, and is not that hot at all. I'd rate it as, "mild medium" (level 2 out of 5) on my heat scale.

Otherwise, the primary taste profile of this jerky is that of sweet & salty, with a dominant soy sauce and black pepper flavor. There are light swashes of citrus tang, and just hints of the cayenne pepper sauce. The natural meat flavors are noticeable towards the latter part of chewing, with some bursts of fat.

The meat consistency is excellent for beef brisket jerky. It's quite soft and tender, and very meaty. There's only light stringiness found. The chewing texture feels like real meat, just quite soft and tender. Some strips are very soft and tend to chew mushy.

Verdict

This revised recipe of Sweet & Spicy Beef Brisket Jerky from Jedidiah's Jerky lives up to its claims of being sweet and spicy with strong initial sweet that imparts a one-two punch of black pepper and cayenne pepper sauce. But it's not that hot at all, in fact quite tame for those of us who like spicy foods, but probably just right for others. The real winner in this jerky is the bold, over-the-top flavor, mixed with the tender, meaty chewing. Jedidiah's revised recipe seems to include a better meat consistency, more meatier chewing texture, but still very soft and tender.

One the newest jerky brands on the market is Chef Craig's Beef Jerky. A product of CJM Products, it's based out of West Kingston, RI.

It's the idea of Craig Mitchell, who a few years ago, had sent me samples of his own homemade jerky, with the intent of launching a business someday. Mitchell received his Culinary Arts degree from Johnson & Wales University, and has been cooking professionally since 1978.

As of this review, the only flavor Chef Craig's offers is this Original.



Ingredients

Beef, brown sugar, soy sauce, hot sauce, liquid smoke, browning sauce, worcestershire sauce, black pepper, steak seasoning, red pepper, lemon pepper, garlic, onion, chili powder, chipotle chile pepper.

Taste

The first thing I taste from the surface of these pieces is a saucy sweetness with some smokiness mixed in. It's almost like a sweet & smoky combination of worcestershire, soy sauce, and au jus (think French Dip). A light burn begins building.

The chewing flavor brings in a natural meat flavor, but with some citrus-like tanginess. The burn continues to build up.

For being the company's Original flavor, it's anything but plain. In fact, it's very flavorful, with a well-seasoned marinade that tastes much different than many other brands. The tanginess in the chewing livens up the snacking, while the natural meat flavor satisfies the carnivore in me.

It also has a moderate level of heat in this, something I'd rate on my personal heat scale as "medium" (level 3 out of 5). But I don't really taste much of the chile pepper flavor, perhaps just a faint bit reaching through the heavier saucey-seasoned marinade.

The flavor of this jerky seems to build up higher as the chewing goes on. When I put a piece into my mouth, the flavor starts out low and gradually increases with each chew. You could suck on a piece without chewing, and almost get the same effect. There's enough flavor in these meat slices that you can get a lot of it without chewing.

The level of saltiness in this feels moderate, maybe a touch above.

Overall, what you're going to get is a well-seasoned marinade with a very saucy flavor, much like a trio of worcestershire, soy sauce, and french dip au jus, along with a noticeable natural meat flavor, a nice tanginess in the chewing, and moderate amount of heat.

Meat Consistency

These are slices of whole meat, sliced into bite-sized pieces of medium thickness. There's a fair amount of smaller sized bits too.

This is a dry jerky with a slightly sticky surface feel. These pieces have a good deal of flexibility, and seem slightly rubbery.

The chewing texture starts out with that slight rubbery feel, and offers a light bit of chewing resistance. A few chews into it and it starts to soften. It begins to take on a very meaty resemblance, and by the time its chewed down to a soft mass, it feels very much like a piece of steak cooked medium-well.

I don't see much fat on these pieces and found no gristle or tendon. I don't encounter any stringiness, but felt a few pieces of unchewable tissues. It's mostly all meaty.

In terms of clean eating, it's mostly clean. My fingertips do collect a light bit of stickiness, but not enough to require a licking or wiping before touching my keyboard.

Snack Value

Chef Craig's Beef Jerky sells this Original variety from its website at a price of $28.00 for package of 10 (each package is 1.75oz). Shipping is $5.95. That works out to a price of $1.94 per ounce.

For general jerky snacking purposes, at the $1.94 per ounce price, it's a good value. I'm getting a great overall flavor, with a good meat consistency and good chewing texture. Compared to major brands of jerky sold in stores, it's priced about the same, but provides much better flavor and a little better chewing.

Rating

This Original beef jerky from Chef's Craig's tastes far from ordinary, packing in a lot of good flavors. It has a very tasty marinade, more like a combination of worcestershire, soy sauce, and french dip au jus, but with a good deal of sweet and smokiness mixed in.

But then it adds a nice natural meat flavor with a citrus tanginess. Throw in a touch of chile pepper flavor and a moderate level of heat, and it creates a very impressive flavor profile, and not overly salty

The meat consistency is overall good. It starts out with a light rubbery feel, but manages to chew down to a steak-like texture. It's very meaty with little to no stringiness or unchewable tissues. Collecting together the tiny bits of meat can provide something of a hindrance, but overall not that bad.

For me, it was the impressive flavor that opened my eyes and made me think, "Wow, this is great!"

My recommended beer pairing for this, go with a porter, such as the Sierra Nevada Porter, or the Stone Smoked Porter.

Crazy Horse Beef Jerky is a brand made by Dave Wenrich in Hellam, PA, who started making this brand about nine months ago, based on a old family recipe that he got from his father, who received the recipe from his father, who received it from his father.

Dave smokes all of his jerky from USDA certified bottom round in a homemade smoke house using maple, oak, and fruit woods, and sells it locally in some shops and on his eBay store.

Taste

The first thing I taste from the surface of these pieces is a light sweet, followed by a smokiness. I can pick up some saltiness, and a touch of black pepper.

The chewing flavor starts with a good deal of natural meat flavors and more saltiness.

For being dubbed a "Sweet" variety of beef jerky, it does have some sweetness to it. It's perhaps most noticeable upon putting a piece into my mouth, but as I get into the chewing, the smoky, salty, and natural meat flavors take over and the sweetness moves to the back. But I can still taste it in there, and seems to do a job good adding an extra dimension and providing a little more body. You won't find this heavily sweet, just enough to color the overall flavor.

Otherwise, this jerky is much like the Original variety, with a strong smoky, natural meat flavor defining the dominant taste.

It also has the light tanginess in the chewing that the Original variety has.

I think the sweetness does a fair enough job to counter the higher saltiness. Like the Original variety, this Sweet variety has the high saltiness, but I think the sweetness tempers it, letting you still taste it without getting a salt scorching.

Some of these strips contained a bit more black pepper than I found in the Original variety, and I could taste it more. I'm sure that's just a variance from one piece to another and not something specific with this Sweet variety.

Overall, what you're going to notice in this jerky is the smoky, natural meat flavor, with a good deal of saltiness, just like in the Original variety, but with an initial burst of sweet that mixes into the chewing flavors, adding a bit more body.

Meat Consistency

These are slices of whole meat, sliced to medium thickness, and in strips of about 3-4 inches in length.

This is a dry jerky, with a slightly oily surface feel. The strips have some flexibility to them, but easily crack open with any amount of bending. Tearing pieces apart with my fingers seems easy enough, and chewing seems easy.

The chewing texture starts out feeling dry and coarse, but is soft enough that it chews down without much effort. It has some chewiness to it, but never gives my jaws a workout. Once chewed down to a soft mass, it takes a on a steak-like feel, very comparable to one cooked well-done.

I didn't find much of any fat on these strips as I did on with the Original variety, I didn't find any gristle, tendon, and nothing stringy. I found no unchewable wads of tissue when chewing. It's pretty much all meat.

As for clean eating, my finger tips pick up trace amounts of oil, but not as much as I found with the Original variety.

Snack Value

Crazy Horse Beef Jerky sells this Sweet variety online at a price of $26.99 for one pound. That price includes the shipping. That works out to a price of $1.69 per ounce.

For general jerky snacking purposes, at the $1.69 per ounce price, it's an excellent value. I'm getting a lot of snackability from this. That price is less than what you'd pay at the grocery store for the major brands of jerky, yet it's far superior in flavor, consistency, and chewing texture.

As a Sweet beef jerky, at the same $1.69 per ounce price, it's a decent value. I do get a fair amount of sweet, not strong, not overwhelming, but enough to notice. Still, the price is still is low enough compared to the major brands, that I think you're getting your money's worth.

I'm giving this a best rating.

This Sweet variety from Crazy Horse Beef Jerky is much like the Original variety, in that it's centered around a strong smoky natural meat flavor, but provides some extra sweetness to help color the flavor. I got an initial burst of sweet upon putting a piece into my mouth, and then with the chewing it fades into the mix and gives this jerky more body and balance.

It's easy to tear apart and chew, it still has some chewiness like you'd expect with jerky, but doesn't give my jaws a workout, and still chews like a piece of real meat.

When I wrote the review of the Original variety, I said that I wanted an extra bit of flavor from some other ingredient, and perhaps adding the sweet does it. It adds body to the overall flavor, and even tempers the higher saltiness, but still lets the strong smokiness and natural meat flavors show through.

As for my recommended beer pairing, I'd still go with a smoky porter, just like I recommended for the Original variety, but stick to one with a lighter body, such as the Stone Smoked Porter or the Sierra Nevada Porter.

Lawless Jerky is a brand owned and operated by Lawless Jerky, LLC based out of Santa Monica, CA. It was started by Matthew Tolnick, a former attorney who held a not-so-secret passion for making chewy chunks of dehydrated beef. After a stint as a legal counselor, he decided to throw his hat into the jerky industry and start his own business.

This Pho variety is described by the company as being made with, "...herbs like cilantro, mint and basil; spices like star anise, cinnamon and cloves, and the heat of jalapeno."

Ingredients

100% Grass-fed beef, rice vinegar, brown sugar, Sriracha sauce, plum sauce, fish sauce, lime juice, pho spice blend, salt.

Review

The first flavors that hit the palate is a lightly sweet, pungent sauce flavor. It's kinda like a mixture of plum sauce and fish sauce. There's a touch of heat that comes on. The chewing brings in more of that saucy flavor with a light natural meat flavor. It also brings in a bit more of that pungent spice, along with a touch of tanginess.

As for being marketed as a "Pho" flavored beef jerky, it seems to hold up well. I do get the unmistakable flavor of Pho paste that is used to flavor the famous Thai soup base. I can also pick up traces of vegetables used in Pho, such as cilantro and mint. If you've never had Pho, imagine beef with hoisin sauce, or more like an Asian-inspired worcestershire.

The level of heat in this is light. It registers as "mild-medium" on my personal heat scale (level 2 out of 5).

Otherwise, the flavors that define this jerky largely starts with this combination of plum sauce and fish sauce. There's no fishy flavor to this, but if you've had the table-side fish sauces found in Thai & Vietnamese restaurants, it's very much like that, a fermented, pungent flavor. The plum sauce gives it a light sweet and fruity character. There's some spiciness in the background and touches of savory spices and seasonings.

The meat consistency looks great, mostly all meat with little signs of fat. Stringiness is at a minimum. It has the appearance of being tenderized through some kind of pounding, with slice marks along the surface. It also chews like pound steak. It chews easily, with a light chewiness, and varies between semi-moist to dry.

Verdict: This Pho beef jerky from Lawless Jerky manages to do a great job of representing the flavor of a Pho soup, mostly as the soup base. It's a good balance between the sweet, fruity plum sauce and the fermented, pungent fish sauce. But there's a light blend of Pho seasonings in the background, along with traces of cilantro and mint. The natural meat flavors are noticeable in this. Overall, this jerky gives off a fresh, clean taste unlike many other major jerky brands.

To mark National Jerky Day and celebrate the company's Arizona roots, Lawless Jerky donated 24,870 bags of jerky to St. Vincent de Paul, the prominent Arizona charitable organization.

Today, Lawless Jerky also will team up with the Phoenix Suns SixthMan Members and St. Vincent de Paul to prepare, serve and enjoy a meal alongside hundreds of local Phoenix families in need.

Lawless Jerky Founder and CEO Matt Tolnick spearheaded the donation and community support initiative: "Lawless Jerky is proudly made in Arizona. The Phoenix community is our manufacturing home and we are fortunate to be surrounded by loyal and hardworking employees and business partners from the Phoenix area."

Each year, St. Vincent de Paul provides approximately 10,000,000 meals to people in need, in addition to a wide array of life services including employment counseling and placement, medical and dental services, and the provision of clothing and food.

The impact this sizable donation will be felt throughout the state of Arizona, as Lawless Jerky bags will be packed into shelf stable meals and delivered to the 83 conferences maintained throughout the state by St. Vincent de Paul. Collectively, over 500,000 grams of 100% grass-fed protein will be distributed.
